This Slow Cooker Creamy Lemon Chicken recipe features juicy, tender chicken breasts cooked slowly in a buttery lemon sauce infused with garlic, Italian seasoning, and a creamy half-and-half mixture. Perfect for an easy, comforting meal with minimal prep and maximum flavor.

Ingredients

Chicken

  • 5 boneless, skinless chicken breasts
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 teaspoon Italian seasoning

Butter and Lemon Sauce

  • 6 tablespoons unsalted butter, divided
  • 2 lemons, juiced and zested
  • 2 garlic cloves, minced

Creamy Mixture

  • 1 cup half and half
  • 1 tablespoon cornstarch
  • 1 tablespoon chicken base (optional, but recommended)

Instructions

  1. Prepare Chicken Seasoning and Sear: In a large cast iron skillet, melt 1 tablespoon of butter over medium-high heat. Season the chicken breasts evenly with kosher salt, black pepper, and Italian seasoning. Place the chicken in the skillet and cook for 4-6 minutes on each side until lightly browned to enhance flavor.
  2. Transfer to Slow Cooker: Place the seared chicken breasts into the slow cooker. Pour the lemon juice, sprinkle the lemon zest, and add the minced garlic over the chicken. Distribute the remaining butter in small pieces on top. Note: The lemons should not be cooked in the slow cooker; add them fresh as described.
  3. Slow Cook the Chicken: Cover and cook on low heat for 4 hours or on high heat for 2 hours to allow the flavors to meld and the chicken to become tender.
  4. Prepare Creamy Sauce Mixture: In a large measuring cup, whisk together the half and half, cornstarch, and chicken base until well combined. This mixture will thicken the sauce and deepen the flavor.
  5. Add Creamy Mixture and Final Cook: Pour the creamy mixture over the chicken in the slow cooker, stir gently to combine, and cook for an additional 1 hour on high to thicken the sauce and fully cook the chicken through.

Notes

  • For best flavor, sear the chicken before slow cooking to develop a richer taste and appealing color.
  • The chicken base is optional but adds depth and enhances the savory quality of the sauce.
  • If you prefer a thicker sauce, you can increase the cornstarch by an additional 1/2 tablespoon.
  • Serve this dish with rice, mashed potatoes, or steamed vegetables to enjoy the creamy lemon sauce fully.
  • Adjust seasoning after cooking if needed by adding more salt or pepper to taste.
