These S’mores Bars are a delightful twist on the classic campfire treat, combining a buttery graham cracker crust with melted semi-sweet chocolate and fluffy toasted marshmallows baked to golden perfection. Perfect for indoor enjoyment or gatherings, these bars deliver all the nostalgic flavors of s’mores in a convenient, sliceable form.

Ingredients

Crust

  • 2 sleeves Graham Crackers (~2 ½ cups crushed)
  • 1 ½ sticks Unsalted Butter (12 Tbsp. melted)
  • ¼ cup Granulated Sugar

Topping

  • 1 (12-ounce) bag Mini Marshmallows
  • 12 ounces Semi Sweet Chocolate Chips

Instructions

  1. Preheat Oven: Preheat your oven to 350° F (175° C) to prepare for baking.
  2. Prepare Baking Dish: Line a 9×13-inch baking dish with parchment paper or foil, then spray the lining with cooking spray to prevent sticking.
  3. Crush Graham Crackers: Place the graham crackers in a ziplock bag and crush them into fine crumbs using a rolling pin, or pulse in a food processor.
  4. Melt Butter: Microwave the butter in a small bowl for 30 seconds, stir, then microwave for an additional 30 seconds until fully melted.
  5. Make Crust: In a large bowl, combine the crushed graham crackers and sugar. Stir in the melted butter until the crumbs are evenly coated.
  6. Form Crust Layer: Pour the crumb mixture into the prepared baking dish. Press firmly and evenly using the bottom of a measuring cup or your fingers to create a smooth layer.
  7. Bake Crust: Bake the crust in the oven for 8 minutes to set it.
  8. Add Chocolate: Remove the dish from the oven and evenly sprinkle the semi-sweet chocolate chips over the hot crust.
  9. Top with Marshmallows: Layer the mini marshmallows evenly on top of the chocolate chips.
  10. Bake Topping: Return the dish to the oven and bake for 12-17 minutes, or until the marshmallows are puffed and lightly golden brown.
  11. Cool and Slice: Remove the bars from the oven and place on a cooling rack to cool completely or slightly warm. Once cooled to your preference, slice into 15 bars or desired size portions.
