These S’mores Rice Krispies Treats are a delightful twist on the classic cereal treat with a nostalgic s’mores flavor. Featuring layers of crispy Rice Krispies and Golden Grahams coated in melted marshmallow, and accented with melting Hershey’s chocolate and extra mini marshmallows, these treats are chewy, crispy, and irresistibly gooey—perfect for a party or a fun family dessert.

Ingredients

Butter and Marshmallow Mixture

  • 6 Tablespoons salted butter
  • 1 (12-ounce) bag jumbo marshmallows
  • 1 teaspoon vanilla extract

Cereal and Toppings

  • 4 cups Rice Krispies cereal
  • 2 cups Golden Grahams cereal
  • 2 1/2 cups mini marshmallows, divided (about ½ of a 10-ounce bag)
  • 4 Hershey bars, broken into pieces

Instructions

  1. Prepare Baking Dish: Line a 9×9 inch baking dish with parchment paper or butter it to ensure easy removal of the treats once set.
  2. Melt Butter: In a large saucepan over medium heat, melt 6 tablespoons of salted butter carefully, making sure it does not brown.
  3. Add Jumbo Marshmallows: Add the full 12-ounce bag of jumbo marshmallows to the melted butter. Stir continuously and gently until the marshmallows are completely melted and the mixture is smooth.
  4. Flavor the Mixture: Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract to add depth to the marshmallow mixture.
  5. Combine Cereals and Marshmallows: Add 4 cups of Rice Krispies, 2 cups of Golden Grahams, and 1 ½ cups of mini marshmallows into the marshmallow mixture. Stir thoroughly until all cereal pieces are evenly coated.
  6. Layer the Mixture: Transfer half of the cereal mixture into the prepared baking dish. Evenly sprinkle half of the broken Hershey chocolate pieces and half of the remaining 1 cup mini marshmallows over this first layer.
  7. Add Remaining Mixture: Add the rest of the cereal mixture on top and gently press down to compact slightly without over-compressing, which would make the treats too dense and hard.
  8. Top and Set: Finally, top the treats with the remaining Hershey chocolate pieces and mini marshmallows. Allow the treats to cool and set completely before cutting into small squares to serve.

Notes

  • Storage: Enjoy these treats the day they are made for best texture. Store leftovers in an airtight container at room temperature for up to 3 days. Reheat gently in the microwave for 15-20 seconds to soften before serving.
  • Freezing: Wrap tightly in plastic wrap and aluminum foil, then freeze for up to 3 months. Thaw at room temperature for 30 minutes or microwave for 15-20 seconds before serving.
  • Rice Krispies Alternatives: You can substitute any fresh rice cereal or even corn flakes. Golden Grahams can be fully replaced but may affect texture slightly.
  • Golden Grahams Substitutes: Use crushed graham crackers, Teddy Grahams, Fiber One Honey Squares, or Cinnamon Toast Crunch if unavailable.
  • Chocolate Variations: Try chocolate chips, chunks, Ghirardelli squares, or Reese’s peanut butter cups for different flavors.
