A flavorful and spicy vegan Sofritas recipe featuring firm tofu simmered in a smoky chipotle and tomato-based sauce, perfect for burritos, tacos, or bowls.

Ingredients

Tofu

  • 14 oz very firm tofu

Marinade and Sauce

  • 1 chipotle in adobo sauce (canned)
  • 2 tablespoons adobo sauce (from the canned chipotle)
  • 3 cloves of garlic
  • 2 teaspoons cumin
  • 1/2 teaspoon smoked paprika powder
  • 1 green bell pepper, roughly chopped
  • 1/2 teaspoon dried oregano
  • 1 tomato, quartered
  • 3/4 cup salsa
  • 1 teaspoon salt
  • 2 teaspoons tomato paste

Instructions

  1. Drain and Prepare Tofu: Drain the tofu by wrapping it in paper towels and squeezing out as much excess water as possible. Cut the tofu into slices to prepare for browning.
  2. Brown the Tofu: Heat some oil in a large non-stick frying pan over high heat. Cook the tofu slices until they are nicely browned on both sides, approximately 8 minutes.
  3. Make the Marinade: While the tofu is browning, place the chipotle pepper, adobo sauce, garlic, cumin, smoked paprika, green bell pepper, oregano, tomato, salsa, salt, and tomato paste into a food processor or blender. Process until you get a chunky sauce similar in texture to salsa.
  4. crumble the Tofu: When the tofu is browned, use a wooden spoon to crumble it into pieces that are not too fine, preserving some texture.
  5. Add Sauce to Tofu: Pour the prepared sauce over the crumbled tofu in the frying pan.
  6. Mix Well: Stir the tofu and sauce thoroughly to combine flavors evenly.
  7. Simmer: Reduce heat to medium and simmer the tofu and sauce mixture for 15 minutes to allow flavors to meld and sauce to thicken slightly.
  8. Serve: Enjoy your Sofritas as a filling in burritos or tacos, or serve it in a burrito bowl with accompaniments like brown rice, lettuce, guacamole, and vegan sour cream.
