Spooky Eyeball Tacos are a fun and festive Halloween-themed twist on classic tacos. Ground beef seasoned with taco spices is served in warm tortillas, topped with shredded lettuce, cheese, and creatively assembled ‘eyeballs’ made from grape tomatoes, sour cream, and black olives. Perfect for a spooky party or a fun family meal.

Ingredients

Meat and Seasoning

  • 1 lb ground beef (or chicken/turkey)
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup water

Main Toppings

  • 8 small flour or corn tortillas
  • 1 cup shredded cheese (cheddar or blend)
  • Shredded lettuce

Eyeball Assembly

  • 8 grape or cherry tomatoes, halved
  • 1 cup sour cream
  • 16 sliced black olives

Optional

  • Salsa or hot sauce (to drizzle)

Instructions

  1. Cook the meat: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat to keep the tacos from being greasy.
  2. Add seasoning: Stir in the taco seasoning packet along with ½ cup of water. Simmer until the mixture thickens and coats the meat evenly.
  3. Warm the tortillas: Heat the tortillas in a skillet or microwave until soft and pliable, making them easier to fold.
  4. Assemble tacos: Lay the warm tortillas flat and fill each with a generous portion of the meat mixture, shredded lettuce, and shredded cheese.
  5. Create eyeballs: Place a halved grape or cherry tomato on top of each taco. Add a dollop of sour cream on the tomato half, then top with a sliced black olive to resemble an eyeball.
  6. Add spooky sauce (optional): Drizzle salsa or hot sauce around the eyeballs to enhance the spooky look and add extra flavor.

Notes

  • Use rotisserie chicken or plant-based crumbles for a delicious variation.
  • Add thin red pepper strips as “veins” around the eyeballs for extra spooky detail.
  • Let kids decorate their own tacos as a fun and interactive Halloween activity.
  • Assemble the eyeballs just before serving to keep the sour cream and tomatoes fresh and prevent sogginess.
