Ingredients

Vegetables and Proteins

  • 1 cup chopped baby spinach, lightly packed
  • 2 tbsp sun-dried tomatoes in oil, patted dry and diced small
  • 1/2 cup egg whites

Seasonings and Cheese

  • 1/4 tsp Italian seasoning
  • Salt, to taste
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp crumbled feta cheese

Wrap and Cooking

  • 1 large whole wheat tortilla
  • Cooking spray

Instructions

  1. Preheat the pan: Heat your pan to medium heat and spray a thin, even layer of cooking spray to prevent sticking.
  2. Cook the spinach: Add the chopped baby spinach to the pan, stir frequently, and cook until wilted, about 2 minutes.
  3. Add sun-dried tomatoes: Stir in the diced sun-dried tomatoes and spread the mixture evenly over the pan’s surface.
  4. Pour in egg whites and season: Pour in the egg whites, then sprinkle with Italian seasoning and salt to taste.
  5. Apply the tortilla: Immediately press the whole wheat tortilla gently on top of the egg whites, using your hands or the back of a spatula to ensure they adhere together.
  6. Cook covered: Cover the pan and cook for about 2 minutes, until the tortilla and eggs stick together and can slide easily in the pan.
  7. Flip the wrap: Carefully flip the whole tortilla so it is on the bottom with the egg whites on top.
  8. Add cheese and melt: Sprinkle the mozzarella and crumbled feta cheese evenly on top, cover, and let melt for 1 minute.
  9. Fold the wrap: Using a spatula, fold in both sides of the tortilla in a letter fold. Brown the bottom of the folded wrap for 1-2 minutes, flip, and brown the other side similarly.
  10. Cool and serve: Remove the wrap from the pan and let it cool on a cutting board for 5 minutes. Slice in half and serve warm.

Notes

  • Prep and measure all ingredients in advance as this recipe cooks quickly.
  • Use a non-stick pan that matches the size of your tortilla for best results.
  • Flip the tortilla and eggs gently to keep them stuck together and prevent mess.
