This Strawberry Kiwi Fruit Pizza Watermelon is a playful and delicious dessert that mimics the look of a watermelon but delights with the flavors of sweet sugar cookie crust, creamy marshmallow fluff, and fresh fruit toppings. Perfect for summertime gatherings, this dessert combines a buttery sugar cookie base with a fluffy cream cheese topping, adorned with kiwi slices, strawberries, and chocolate chips to create the appearance and taste of a watermelon slice.

Ingredients

Cookie Crust:

  • 1 pkg. Betty Crocker Sugar Cookie Mix
  • 1 tablespoon flour
  • 1 stick (½ cup) butter, softened
  • 1 large egg

Cream Cheese Fluff:

  • 1 block (8 ounces) cream cheese, softened
  • 1 cup marshmallow fluff
  • 1 cup frozen whipped topping, thawed

Toppings:

  • 4 kiwi
  • 2 pounds strawberries
  • 32 chocolate chips

Instructions

  1. Prepare Cookie Crust: Preheat your oven to 350°F (177°C). Spray two 9-inch springform pans with cooking spray and line the bottoms with parchment paper or non-stick foil to prevent sticking.
  2. Make the Dough: In a mixing bowl, combine sugar cookie mix, flour, and softened butter. Mix until the butter breaks into small pea-sized pieces. Add the egg and mix until a dough forms.
  3. Shape and Bake the Crust: Divide the dough evenly in half. Pat one half into the bottom of each prepared pan, spreading the dough so it ends about ½-inch from the edge. Bake for 14-18 minutes until the crust turns golden brown.
  4. Cool the Cookie Base: Allow the cookie crusts to cool in the pans for 10 minutes, then remove from pans and set on a cooling rack to cool completely.
  5. Make Cream Cheese Fluff: Beat the softened cream cheese until light and fluffy. Add the marshmallow fluff and continue to beat until combined. Fold in the thawed whipped topping and mix until smooth.
  6. Assemble the Base Layer: Spread the cream cheese fluff evenly over each cooled cookie crust.
  7. Prepare Fruit Toppings: Peel and thinly slice the kiwi, then cut slices in half. Wash and dry strawberries, then slice off the outer white edges to reveal bright red fruit. Slice strawberries into small pieces suitable for topping.
  8. Decorate the Fruit Pizza: Cut the cookies in half to resemble watermelon slices. Arrange overlapping kiwi slices along the curved edge to mimic the green rind. Sprinkle the small strawberry pieces over the cream cheese layer as the ‘red flesh’. Place 8 chocolate chips on each slice to simulate watermelon seeds.
  9. Chill Before Serving: Refrigerate the assembled fruit pizzas until ready to serve to let the flavors meld and the fluff set.

Notes

  • For best results, make sure the cream cheese is softened to avoid lumps.
  • If you don’t have springform pans, round cake pans lined well with parchment paper can be substituted.
  • This dessert can be refrigerated for up to 2 days, but best served fresh.
  • Feel free to swap strawberries and kiwi with other fruits if desired.
  • Use dark chocolate chips for a better mimicry of watermelon seeds.
