A delicious and easy-to-make Strawberry Peach Crisp featuring a buttery oat topping and a sweet vanilla-infused fruit filling, perfect for a cozy dessert that combines fresh summer fruits with a crunchy, golden crust.

Ingredients

Topping

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/3 cup salted butter, melted
  • 1/2 teaspoon cinnamon

Fruit

  • 2 1/2 cups peaches, peeled and sliced (about 3 peaches)
  • 1 cup sliced strawberries

Syrup

  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the topping: In a mixing bowl, combine the old fashioned oats, brown sugar, flour, cinnamon, and melted salted butter. Mix just until the mixture becomes crumbly and evenly coated.
  2. Create the base layer: Spread half of the crumbly topping mixture evenly across the bottom of a greased 9×9 inch baking pan to form the crust.
  3. Add the fruit: Arrange the peeled, sliced peaches and sliced strawberries over the crust in the baking pan, distributing them evenly.
  4. Make the syrup: In a small saucepan, combine the brown sugar, cornstarch, salt, and water. Cook over medium-high heat, stirring constantly, until the mixture thickens — this should take just a couple of minutes. Remove from heat and stir in the vanilla extract.
  5. Pour syrup over the fruit: Pour the thickened syrup evenly over the peaches and strawberries in the baking dish.
  6. Top the crisp: Sprinkle the remaining half of the crumbly topping mixture evenly over the fruit and syrup layer.
  7. Bake the crisp: Place the baking pan in a preheated oven at 350°F (175°C) and bake for 35 minutes, or until the topping is golden and bubbly around the edges.
  8. Optional broil for extra crispiness: For a crunchier top, turn the oven to broil and place the crisp on the top shelf. Broil for 2-3 minutes, watching carefully to prevent burning.

Notes

  • Make sure to watch the syrup closely while cooking to avoid lumps or burning.
  • Peeling peaches helps create a smoother texture and better presentation, but you can leave the skin on for added fiber if you prefer.
  • The optional broiling step adds a deliciously crispy top but keep a close eye to avoid burning.
  • This crisp is best served warm, optionally with a scoop of vanilla ice cream or whipped cream.
  • Use fresh, ripe peaches and strawberries for the best flavor.
