Instructions

  1. Preheat oven and prepare baking dish: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish using cooking spray or butter to prevent sticking.
  2. Cook the apple filling: Place a saucepan over medium-high heat. Add the sliced apples, cinnamon, vanilla, sweetener, and lemon juice to the pan. Stir occasionally and cook for 2-3 minutes until the apples soften slightly.
  3. Thicken the filling: In a small bowl, mix the cornstarch with water until smooth. Stir this mixture into the apples in the pan, cooking for about 30 seconds to activate the thickening.
  4. Transfer filling to baking dish: Pour the thickened apple mixture into the prepared baking dish, spreading it evenly.
  5. Prepare the topping: In a separate bowl, combine the rolled oats, brown sweetener, cinnamon, and melted butter. Mix thoroughly until the ingredients are well incorporated.
  6. Assemble the crisp: Spread the oat topping evenly over the apple filling in the baking dish.
  7. Bake the crisp: Place the dish in the preheated oven and bake uncovered for 20 minutes.
  8. Cover to prevent over-browning and continue baking: Loosely cover the pan with foil to protect the topping from excessive browning, then bake for an additional 20-25 minutes until the apples are tender and the topping is golden brown.
