This Sweet Chili Chicken recipe is a delicious, easy-to-make slow cooker dish featuring tender shredded chicken in a creamy, tangy sweet chili sauce enhanced with ranch seasoning. Perfect for a comforting weeknight meal, it pairs wonderfully with rice and fresh green onions.

Ingredients

Chicken and Seasoning

  • 2 lbs. boneless skinless chicken breasts
  • 1 oz. packet ranch dressing mix

Sauce and Toppings

  • 20.75 oz. sweet chili sauce (about 2.5 cups; Panda Express brand recommended)
  • 8 oz. cream cheese (Philadelphia brand recommended for best melting)
  • Sliced green onions for serving

Instructions

  1. Prepare the Slow Cooker: Place the boneless skinless chicken breasts evenly in the bottom of the slow cooker.
  2. Add Seasoning: Sprinkle the ranch dressing mix evenly over the chicken breasts to infuse flavor.
  3. Add Sauce: Pour the sweet chili sauce over the chicken and ranch seasoning, ensuring the chicken is well coated.
  4. Top with Cream Cheese: Place the block of cream cheese directly on top of the chicken and sauce mixture. This will melt and add creaminess during cooking.
  5. Cook: Cover and cook on LOW for 4.5 hours or on HIGH for 3.5 hours until the chicken is fully cooked and tender.
  6. Shred and Mix: Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the slow cooker and stir well to combine the cream cheese into the sauce, creating a creamy, flavorful mixture.
  7. Serve: Serve the sweet chili chicken over cooked rice and garnish with sliced green onions. Add a side of green vegetables if desired for a complete meal.

Notes

  • Using Philadelphia brand cream cheese ensures a smooth, creamy consistency as it melts well in the slow cooker.
  • The chicken can be served with steamed vegetables or a fresh salad for a balanced meal.
  • Adjust cooking time depending on your slow cooker model – chicken should be cooked until tender enough to shred easily.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
  • For a spicier variation, add crushed red pepper flakes or substitute part of the sweet chili sauce with a hotter chili sauce.
