Perfect as a snack, appetizer, or kid-friendly meal, they pair beautifully with your favorite dipping sauces.

Ingredients

For the Nuggets

  • 1 medium sweet potato, cooked and peeled
  • 1 lb ground chicken
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried parsley

For the Seasoned Flour

  • ½ cup all-purpose flour
  • ½ cup corn starch
  • 1 teaspoon salt (or more to taste)
  • 1 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Other Ingredients

  • Bowl of cold water (for wetting hands)
  • Oil spray (for coating nuggets before baking)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or spray it lightly with oil to prevent sticking.
  2. Mix Chicken Nugget Ingredients: In a large bowl, mash the cooked and peeled sweet potato with a fork until mostly smooth. Add the ground chicken, salt, pepper, paprika, garlic powder, onion powder, and dried parsley. Mix well until fully combined.
  3. Prepare Seasoned Flour: In a separate bowl, combine all-purpose flour, corn starch, salt, pepper, garlic powder, onion powder, and paprika. Stir until evenly mixed.
  4. Form Nuggets and Coat: Dip your hands in cold water to keep the mixture from sticking. Take about one rounded tablespoon of the chicken and sweet potato mixture and shape it into a nugget. Dredge each nugget in the seasoned flour mixture, gently shaking off excess flour, and place them evenly spaced on the prepared baking sheet.
  5. Spray and Bake: Lightly spray the tops of the nuggets with oil spray to promote browning. Bake in the preheated oven for about 20 minutes, flipping the nuggets halfway through cooking to ensure even doneness, until the chicken is fully cooked and nuggets are golden brown.
  6. Serve: Remove the nuggets from the oven and serve warm with your favorite dipping sauces.

Notes

  • Cooking the sweet potato: You can roast, boil, or microwave the sweet potato until tender before peeling and mashing.
  • For a crispy alternative, you can pan-fry the nuggets in a skillet with a little oil instead of baking.
  • Ensure the chicken is cooked through by checking that the internal temperature reaches 165°F (74°C).
  • Use parchment paper or grease the pan well to prevent sticking during baking.
