Perfect for a fun and flavorful meal, it’s easy to prepare and bakes quickly for a satisfying dinner.

Ingredients

For the Base and Meat:

  • Pre-made pizza dough for a 12-inch pizza (half of a homemade recipe or store-bought)
  • ¾ pound lean ground beef (90/10)
  • ½ cup chopped yellow onion
  • 2 Tablespoons water
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 ½ teaspoons chili powder
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon dried oregano

For the Sauce and Cheese:

  • 1 cup refried beans
  • ⅔ cup salsa
  • 1 cup freshly grated sharp cheddar cheese
  • 1 cup freshly grated Monterey Jack cheese

Toppings:

  • Quartered cherry tomatoes
  • Shredded lettuce
  • Sliced olives
  • Sour cream or ranch dressing
  • Salsa, taco sauce, or hot sauce (optional)
  • Chopped cilantro for garnish (optional)
  • Crushed Fritos or tortilla chips (optional)

Instructions

  1. Preheat the oven: Set your oven to 475℉ (246℃). If you’re using a pizza stone, place it inside the oven to heat up along with the oven. If you’re using a baking sheet or metal pizza pan, line it with parchment paper to prepare for baking.
  2. Cook the seasoned beef: In a large skillet over medium heat, add the ground beef and chopped onion. Cook, breaking up the meat as it browns. When the beef is about halfway cooked, add 2 tablespoons of water, kosher salt, black pepper, chili powder, smoked paprika, garlic powder, onion powder, and dried oregano. Continue to cook until the beef is fully cooked and the water has evaporated. Set this mixture aside.
  3. Prepare the bean and salsa mixture: In a small mixing bowl, stir together the refried beans and salsa until you have a smooth, combined sauce.
  4. Partially bake the crust: Roll out the pizza dough into a 12-inch circle. Transfer it onto the preheated pizza stone or lined baking sheet. Use a fork to pierce the dough several times to prevent bubbles. Bake the crust for about 3 minutes, then remove it from the oven.
  5. Assemble the pizza: Quickly spread the refried beans and salsa mixture evenly over the partially baked crust. Sprinkle the sharp cheddar and Monterey Jack cheeses uniformly over the beans. Then distribute the cooked seasoned ground beef evenly on top.
  6. Finish baking: Return the pizza to the oven and bake for an additional 4-5 minutes, or until the cheese has melted and the crust is golden and crisp.
  7. Add toppings and serve: Remove the pizza from the oven and top with quartered cherry tomatoes, shredded lettuce, sliced olives, and dollops of sour cream or ranch dressing. Add salsa, taco sauce, or hot sauce if desired. Garnish with chopped cilantro and crushed Fritos or tortilla chips for extra crunch. Slice and serve warm.

Notes

  • Storage: Store leftover pizza without fresh toppings in an airtight container in the refrigerator for up to 3-4 days.
  • Freezing: Freeze the fully baked pizza (without fresh toppings) for up to 2 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: For best texture when reheating, use a 375°F oven or heat in a skillet until warmed through.
