Ingredients

Cauliflower and Batter

  • 1 head cauliflower, cut into florets
  • 1 cup oat flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • 1 cup non-dairy milk
  • Freshly ground pepper, to taste

Coating and Sauce

  • 1 ½ cups quick oats or crushed crackers
  • 1 cup teriyaki sauce
  • Sesame seeds, to sprinkle
  • Chopped spring onions, for garnish

Instructions

  1. Preheat the Oven: Set your oven to 220ºC (425ºF) and line a large baking sheet with baking paper to prepare for baking the wings.
  2. Prepare Cauliflower Florets: Cut the cauliflower into small, evenly sized florets to ensure uniform cooking for all pieces.
  3. Make the Batter: In a medium or large bowl, whisk together the oat flour, non-dairy milk, salt, garlic powder, onion powder, and freshly ground pepper until smooth with no lumps.
  4. Coat the Cauliflower: Toss the cauliflower florets in the prepared batter using a spatula or spoon, making sure each floret is evenly coated.
  5. Coat with Oats or Crackers: Transfer the batter-coated florets into a bowl filled with quick oats or crushed crackers, coating each piece fully before placing them on the lined baking sheet with enough space between each.
  6. Bake Initially: Bake the coated cauliflower in the preheated oven for 22-25 minutes until crispy.
  7. Prepare Teriyaki Sauce: Pour the teriyaki sauce into a large, shallow bowl. If the sauce is too thick, thin it slightly by adding a few tablespoons of water.
  8. Glaze the Cauliflower: Dip the baked cauliflower pieces into the teriyaki sauce or brush the sauce generously on each piece and then place them back on the baking sheet, ensuring they are well coated.
  9. Bake Again: Return the glazed cauliflower to the oven and bake for an additional 5-10 minutes to let the sauce set and caramelize slightly.
  10. Garnish and Serve: Remove the wings from the oven, sprinkle with chopped spring onions and sesame seeds, and serve immediately while hot and sticky.

Notes

  • Ensure cauliflower florets are evenly sized to promote even baking and crispiness.
  • You can substitute quick oats with crushed gluten-free crackers for a different texture.
  • If you prefer less sticky wings, reduce the amount of teriyaki sauce or brush lightly.
  • These wings are best served immediately for maximum crunch and flavor.
  • Non-dairy milk options such as almond, soy, or oat milk all work well in the batter.
