A flavorful and easy Thai curry noodle dish featuring tender chicken strips cooked in a creamy, spicy red curry coconut sauce, served over gluten-free rice noodles and garnished with lime wedges and sesame seeds.

Ingredients

Protein & Vegetables

  • 1 pound boneless skinless chicken, cut into strips
  • ½ onion, chopped
  • 1 red bell pepper, cut into strips

Sauce & Seasonings

  • 2 tablespoons red curry paste
  • 2 tablespoons minced ginger
  • 2 garlic cloves, minced
  • 1 can coconut milk (about 13.5 oz)
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce, gluten-free if desired
  • 1 tablespoon brown sugar

Noodles & Garnish

  • 5-6 ounces rice noodles, gluten-free if desired
  • Lime wedges, for serving
  • Sesame seeds, for serving

Instructions

  1. Cook Noodles: Prepare the rice noodles according to the package instructions, then drain and set aside.
  2. Cook Chicken: Heat a pan over high heat and add the chicken strips. Cook for a few minutes on each side until browned and cooked through.
  3. Add Aromatics: Add the chopped onion and red curry paste to the pan with the chicken, stirring well to coat the chicken and cook briefly to release the curry’s fragrance.
  4. Add Vegetables and Aromatics: Stir in the red bell pepper strips, minced garlic, and minced ginger. Cook for about one minute to soften slightly and blend the flavors.
  5. Add Liquids: Pour in the coconut milk, stirring to combine. In a separate small bowl, whisk together lime juice, fish sauce, soy sauce, and brown sugar until sugar dissolves. Add this mixture to the pan.
  6. Simmer with Noodles: Bring the sauce to a boil. Add the noodles to the pan, reduce heat, cover with a lid, and simmer gently for about 5 minutes, allowing the noodles to soak up the sauce.
  7. Garnish and Serve: Serve the curry noodles hot, garnished with fresh lime wedges and a sprinkle of sesame seeds for added texture and brightness.

Notes

  • If you want more sauce, add ½ cup of boiled water to the sauce while cooking to thin it out.
  • No additional salt is needed, as the soy sauce and fish sauce provide enough saltiness. Avoid adding salt when boiling noodles to prevent over-salting.
