This Thai Curry Pizza blends the bold flavors of yellow Thai curry paste and creamy coconut milk with fresh vegetables and melted mozzarella on a crisp artisan pizza crust. It’s an inventive fusion dish perfect for those looking to spice up their homemade pizza night with a delicious twist.

Ingredients

Pizza Dough

  • ¼ batch Artisan Pizza Dough (or 1 – 11 inch pizza crust)

Curry Sauce

  • ¼ cup coconut milk
  • 1 tablespoon yellow Thai curry paste

Toppings

  • ½ cup red bell peppers, thinly sliced (½ pepper)
  • ½ cup carrots, cut into thin ribbons
  • 2 tablespoons red onion, thinly sliced
  • 1½ cups shredded mozzarella cheese

Garnish

  • Cilantro for garnish
  • Green onions for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 475 °F (245 °C) and place a pizza stone on the center rack if available to ensure a crispy crust.
  2. Prepare Sauce: In a small bowl, combine the coconut milk and yellow Thai curry paste. Stir well until the mixture is smooth and evenly blended to create a flavorful curry sauce base.
  3. Assemble Pizza: Roll out the artisan pizza dough on a floured baking sheet or on parchment paper if using a pizza stone. Evenly spread the curry sauce over the dough, then layer the thinly sliced red bell peppers, carrot ribbons, and red onion on top. Finish by sprinkling the shredded mozzarella cheese evenly over the vegetables.
  4. Bake: Transfer the pizza to the oven and bake for 9 to 11 minutes or until the crust is lightly browned and the cheese is melted and golden brown.
  5. Cool and Garnish: Remove the pizza from the oven and place it on a wire rack to cool for a couple of minutes. This helps prevent the crust from becoming soggy. Finally, garnish the pizza with freshly chopped green onions and cilantro before slicing and serving.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
  • To reheat, warm the pizza in the oven at 400°F (205°C) for 5-10 minutes or heat in the microwave.
  • Use parchment paper when baking on a pizza stone for easy transfer and cleanup.
  • For a spicier kick, add extra curry paste to the sauce or sprinkle crushed red pepper flakes on top before baking.
