Ingredients

For the Thai Peanut Sauce

  • ¼ cup creamy peanut butter (use ½ cup for more peanut flavor)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chili-garlic sauce or sriracha
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder or 1 clove garlic, finely minced or grated
  • 1 teaspoon ginger powder or 1 teaspoon fresh grated ginger
  • 1 tablespoon water or stock, plus more as needed for thinning

For the Thai Peanut Noodles

  • 8 ounces noodles (rice, flour, egg, ramen, or udon noodles)
  • 1-2 tablespoons sesame oil
  • Garnish: crushed red pepper flakes, fresh chopped green onion, crumbled roasted peanuts, or sesame seeds

Instructions

  1. Prepare the Thai Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice wine vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic powder (or fresh garlic), and ginger powder (or fresh ginger) until the sauce is smooth and well combined. Gradually add water, one teaspoon at a time, until the sauce reaches your desired consistency.
  2. Cook the Noodles: Boil water and cook the noodles according to the package instructions, usually about 4-5 minutes until tender. Drain the noodles well.
  3. Heat the Sauce: In a wok or large skillet, heat 1 to 2 tablespoons of sesame oil over medium heat. Add the prepared Thai peanut sauce and stir continuously for about 1 minute to warm and enhance the flavors.
  4. Toss Noodles with Sauce: Add the drained noodles to the wok or skillet, stirring and tossing gently to coat them evenly with the peanut sauce.
  5. Serve and Garnish: Transfer the coated noodles into serving bowls. Garnish with crushed red pepper flakes, chopped green onions, roasted peanuts, or sesame seeds as desired. Serve immediately for the best flavor and texture.

Notes

  • You can adjust the thickness of the peanut sauce by adding more or less water or stock to suit your preference.
  • Choose your favorite type of noodles such as rice noodles for gluten-free options or egg noodles for a richer taste.
  • For more heat, add extra chili-garlic sauce or sriracha to the sauce.
  • Use fresh garlic and ginger for a more vibrant flavor instead of powders.
  • This dish can be served warm or at room temperature, making it great for meal prep.
