A deliciously warm and comforting cranberry apple crisp featuring a sweet and tangy fruit filling topped with a buttery oat crumble. Perfect for fall and winter gatherings, this easy-to-make dessert combines the tartness of fresh cranberries with the sweetness of honey crisp apples, baked to golden perfection.

Ingredients

For the Topping

  • 2/3 cup Flour
  • 3/4 cup Oats
  • 2/3 cup Brown sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1/2 cup Butter, cold and cut into cubes

Cranberry Apple Filling

  • 3 large Honey Crisp apples
  • 1 1/2 cup Cranberries, fresh or frozen
  • 1/2 cup Brown sugar
  • 3 tbsp Corn starch
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crisp.
  2. Prepare the Fruit Filling: Peel and chop the honey crisp apples into bite-sized pieces. In a large bowl, combine the chopped apples, cranberries, brown sugar, cinnamon, corn starch, nutmeg, and vanilla extract. Mix well to evenly coat the fruit. Pour this mixture into a 9-inch pie plate or an 8×8-inch square baking dish.
  3. Make the Topping: In a separate large bowl, mix together the flour, oats, brown sugar, cinnamon, and salt. Add the cold, cubed butter and vanilla extract. Use a pastry cutter or your clean hands to blend the butter into the dry ingredients until the mixture is crumbly and resembles small peas.
  4. Assemble and Bake: Evenly sprinkle the crumbly topping over the prepared cranberry-apple filling. Place the baking dish on a baking sheet to catch any leaks, then bake in the preheated oven for 55 minutes or until the topping is golden brown and the filling is bubbly.
  5. Rest and Serve: Allow the cranberry apple crisp to rest for 5-10 minutes to set before serving. Serve warm with a scoop of ice cream or whipped cream if desired.

Notes

  • Use cold butter to ensure a crumbly and flaky topping texture.
  • Fresh or frozen cranberries can be used; just adjust baking time slightly if frozen.
  • For extra flavor, add a handful of chopped nuts to the topping.
  • Allow the crisp to cool slightly before cutting for cleaner slices.
  • Store leftovers in the refrigerator and reheat before serving.
