Delight in these deliciously soft and low-carb keto coconut flour cookies, perfect for those following a ketogenic diet. Made with coconut flour, butter or coconut oil, eggs, and a granulated sweetener, these cookies are easy to prepare and bake to golden perfection. Optional egg wash adds a beautiful glossy finish for a professional touch.

Ingredients

Main Ingredients

  • ⅓ cup (50g) coconut flour
  • ⅓ cup (75g) butter or coconut oil, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons granulated sweetener (brown sugar substitute preferred), or more to taste

Egg Wash (Optional)

  • 1 egg
  • 1 tablespoon milk of your choice or cream (almond milk recommended)

Instructions

  1. Preheat the Oven: Set your oven to 180 Celsius (350 Fahrenheit) to ensure it reaches the ideal baking temperature by the time you prepare your dough.
  2. Mix Ingredients: Combine coconut flour, softened butter or coconut oil, eggs, vanilla extract, and sweetener in a mixing bowl. Use a fork to stir until all ingredients are incorporated.
  3. Knead the Dough: Using your hands, knead the mixture until you form a smooth dough. Allow the dough to rest for a few minutes so the coconut flour can absorb moisture and expand. If the dough feels too soft to handle, chill it in the refrigerator for 15 to 20 minutes.
  4. Shape the Cookies: Cut the dough into 16 equal pieces. Roll each piece into a dough ball, then place them on a baking sheet lined with parchment paper. Press each ball down with the palm of your hand to form discs approximately 4 cm in diameter and about 1.5 cm thick.
  5. Apply Egg Wash (Optional): Whisk together 1 egg and 1 tablespoon of milk or cream. Brush this egg wash over the tops of each cookie to achieve a glossy, golden finish once baked.
  6. Bake: Place the baking sheet in the preheated oven and bake for 13 to 15 minutes, or until the cookies turn golden brown on top.
  7. Cool and Serve: Remove from oven and allow cookies to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • Resting the dough allows the coconut flour to absorb moisture, improving texture and ease of handling.
  • If the dough is too sticky or soft, refrigerate before shaping to make it easier to manage.
  • Use your favorite keto-friendly sweetener; adjust sweetness to taste.
  • Optional egg wash provides a shiny, golden surface but can be skipped for a more rustic look.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
