Ingredients

Meat and Seasoning

  • 16 oz. block Velveeta, cubed
  • 1 (10 oz) can Rotel tomatoes (undrained)

Instructions

  1. Heat the skillet: Place a large cast iron skillet or large sauté pan over medium heat, allowing it to preheat fully.
  2. Cook ground beef: Add the ground beef to the skillet. Using a spatula, break it apart and cook until it is fully browned and cooked through, with no pink remaining.
  3. Season the beef: Stir in the taco seasoning thoroughly to coat the ground beef evenly, melding the flavors.
  4. Add cheese and tomatoes: Mix in the cubed Velveeta and pour in the entire undrained can of Rotel tomatoes. Do not drain the tomatoes, as the liquid helps create a smooth dip.
  5. Melt and combine: Reduce the heat to medium-low and cook the mixture, stirring occasionally, until the Velveeta cheese is completely melted and the dip is smooth and creamy.
