Ingredients

Vegetables and Herbs

  • ½ large cucumber
  • 2 cloves garlic
  • 3 tbsp fresh dill, chopped

Dairy-Free Base & Seasonings

  • 2 cups coconut yogurt
  • Salt to taste
  • Black pepper to taste (omit for AIP)
  • Juice of half a lemon
  • 2 tbsp olive oil, divided

Instructions

  1. Prepare the Cucumber: Wash the cucumber thoroughly, leaving the skin on. Grate it finely using a grater or food processor, then pat dry with a clean kitchen towel or paper towel to remove excess moisture.
  2. Add the Garlic: Grate or finely mince the garlic cloves and add them to the bowl with the grated cucumber.
  3. Mix Ingredients: Add the coconut yogurt, salt, pepper, fresh dill, lemon juice, and most of the olive oil to the cucumber and garlic mixture. Stir well to combine all ingredients thoroughly.
  4. Serve: Drizzle the remaining olive oil on top for garnish and serve the tzatziki alongside fresh vegetables or pita chips as a delicious dairy-free dip.
