Enjoy the softest sugar cookie ever made right in your mug! This quick and easy microwave mug cookie uses simple ingredients to deliver a warm, tender treat in under a minute, perfect for satisfying your sweet tooth instantly.

Ingredients

Base

  • 2 tbsp butter
  • 1.5 tbsp granulated sugar
  • 1/2 tbsp brown sugar
  • Pinch salt
  • 1 large egg yolk
  • 1/4 tsp vanilla extract

Dry Ingredients

  • 3 tbsp all purpose flour
  • 1 tbsp corn starch

Topping

  • 1/2 tsp granulated sugar

Instructions

  1. Melting butter: Start by melting the butter directly in your mug using the microwave. Heat for 15-30 seconds depending on whether your butter is chilled or at room temperature until fully melted.
  2. Mix sugars and salt: Add the granulated sugar, brown sugar, and a pinch of salt into the melted butter in the mug and stir until well combined for a sweet and balanced base.
  3. Incorporate wet ingredients: Add the large egg yolk and vanilla extract to the mug and stir just once to bring all wet ingredients together without overmixing.
  4. Add dry ingredients: Add the all purpose flour and corn starch to the mug and gently mix until just combined, being careful not to overwork the batter to keep it soft.
  5. Prepare topping: Flatten the top of the dough using a mini rubber spatula or the back of a spoon and sprinkle on the 1/2 teaspoon of granulated sugar on top to give the cookie its classic sugar crust.
  6. Microwave bake: Bake the mug cookie in the microwave for 40-50 seconds. After 40 seconds, check the center; if it’s not fully set, continue microwaving in 5-10 second increments until just cooked through.
  7. Enjoy immediately: Let the mug cookie cool slightly, then enjoy this warm, soft sugar cookie straight from the mug!

Notes

  • Cooking times may vary depending on microwave wattage; adjust accordingly to avoid overcooking.
  • Use only the egg yolk for extra softness and richness—discard the white or save for another use.
  • For best texture, do not overmix once flour is added.
  • Add a pinch of cinnamon or nutmeg for a flavor twist if desired.
  • Serve immediately for optimal softness; the cookie will firm up as it cools.
