This Chicken and Waffle Casserole combines the classic brunch favorites into a comforting, easy-to-make baked dish. Featuring crispy toasted waffles, savory popcorn chicken, and a sweet maple-infused egg custard, it’s perfect for a weekend brunch or a hearty breakfast treat.

Ingredients

Base

  • 8 frozen waffles
  • ½ bag (12 ounces) popcorn chicken

Egg Mixture

  • 6 eggs
  • ¾ cup milk
  • ¼ cup maple syrup
  • Pinch of salt (optional)
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F (175 degrees C). Spray a 7×9 inch or 8×8 inch casserole dish with cooking spray to prevent sticking.
  2. Toast Waffles: Toast the frozen waffles either in a toaster or by placing them on a baking sheet in the preheating oven for 2-3 minutes until slightly crispy. Then, dice the toasted waffles into bite-sized pieces.
  3. Prepare Chicken: Dice the popcorn chicken into approximately 1-inch pieces. If the chicken is too hard to cut while frozen, microwave it for 30 seconds to soften slightly before dicing.
  4. Assemble Casserole: Spread the diced waffle pieces evenly in the casserole dish. Scatter the diced chicken pieces over and among the waffle pieces, mixing them evenly throughout.
  5. Mix Egg Custard: In a mixing bowl, whisk together the eggs, milk, and maple syrup until smooth. Add a pinch of salt or cinnamon if desired for extra flavor.
  6. Pour & Bake: Pour the egg mixture evenly over the waffle and chicken pieces in the casserole dish. Bake in the preheated oven for 50-60 minutes, or until the eggs are fully set and the top is golden brown.
  7. Cool & Serve: Allow the casserole to cool slightly after baking. Serve warm, optionally topped with extra maple syrup for added sweetness.

Notes

  • Use any brand of frozen waffles, but classic or homestyle waffles work best for texture.
  • Popcorn chicken can be substituted with any cooked bite-sized chicken pieces if preferred.
  • Adding cinnamon or a pinch of nutmeg to the egg mixture complements the maple syrup flavor nicely.
  • For a crispier top, broil for 1-2 minutes at the end of baking, watching carefully to avoid burning.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
