This Ultimate Spicy Cheddar & Apple Fall Veggie Sandwich combines sharp cheddar cheese with sweet honeycrisp apples, tangy pickled jalapeños, and a satisfying crunch from kettle potato chips. Perfectly toasted sourdough bread holds layers of fresh arugula, red onion, Dijon mustard, and honey for a sweet and spicy flavor balance. Ideal for a quick, flavorful lunch in the fall, this sandwich is easily customizable with your favorite ingredients.

Ingredients

Bread & Cheese

  • 2 slices of sourdough bread (or your favorite bread)
  • 1-2 ounces sliced sharp cheddar cheese

Condiments & Spread

  • 1 tablespoon grainy Dijon mustard
  • 1-2 teaspoons honey

Vegetables & Fruit

  • 10 slices pickled jalapeños
  • 5-6 thin slices of red onion
  • ¼ honeycrisp apple, thinly sliced
  • ¼ cup arugula

Crunch

  • ½ cup kettle potato chips

Instructions

  1. Toast the Bread: Place both slices of bread on a small baking sheet and broil on high in the oven for 1-2 minutes. Watch carefully to ensure the bread is lightly browned and does not burn.
  2. Melt the Cheese: Remove the baking sheet from the oven and flip the slices of bread. Cover only one slice with the sliced sharp cheddar cheese, then return to the broiler for another 1-2 minutes until the cheese is melted and bubbly.
  3. Assemble the Sandwich: Remove the baking sheet from the oven. On the melted cheese slice, evenly place the pickled jalapeños. Spread the other slice of bread with grainy Dijon mustard and drizzle it with honey. Layer the apple slices, red onion, arugula, and kettle potato chips on top of the honeyed bread slice.
  4. Finish and Serve: Carefully close the sandwich by placing the cheese-covered bread slice on top of the assembled veggie side. Gently press down so the chips crunch, then slice the sandwich in half and enjoy immediately.

Notes

  • Use your favorite bread if sourdough is unavailable; multigrain or rye also work well.
  • Adjust the amount of pickled jalapeños to control the spice level.
  • For a vegan version, substitute cheddar with a plant-based cheese and honey with maple syrup.
  • Serve immediately after assembling to keep the kettle chips crunchy.
  • Customize the sandwich by adding other fresh vegetables like cucumber or tomato if desired.
