This Tiramisu Chia Pudding is a delicious and healthy twist on the classic Italian dessert. Combining the rich flavors of coffee and cocoa with creamy vanilla yogurt and protein-packed chia seeds, this no-cook pudding is perfect for a nutritious breakfast or guilt-free dessert. It’s easy to prepare, requires minimal ingredients, and can be customized with your favorite milk and sweetener choices.

Ingredients

Main Ingredients

  • 1 cup milk of choice (240g)
  • 1/4 cup chia seeds (45g)
  • 3 tbsp strong brewed coffee or espresso (45g)
  • 3 tbsp vanilla protein powder (21g)
  • 1 1/2 tbsp sweetener of choice (22g)
  • 1/8 tsp salt (optional)
  • 10 oz vanilla yogurt or plant based yogurt (280g)
  • 1 tsp cocoa powder (2g)

Instructions

  1. Mix Ingredients: In a bowl or directly in your serving container, whisk together the chia seeds, milk, strong brewed coffee or espresso, vanilla protein powder, sweetener, and optional salt until well combined.
  2. Refrigerate: Cover the mixture and refrigerate it for at least three hours or preferably overnight. This allows the chia seeds to absorb the liquid and form a thick, pudding-like consistency.
  3. Prepare Yogurt: While the pudding sets, if you are using unsweetened vanilla yogurt, add sweetener to taste to balance the flavors.
  4. Assemble and Serve: Once the chia pudding has gelled, top each portion with sweetened or flavored vanilla yogurt.
  5. Garnish: Dust the top of the pudding with cocoa powder to add the classic tiramisu touch.
  6. Store Leftovers: Keep any leftovers refrigerated in a covered container for up to four days to maintain freshness and flavor.

Notes

  • Use any milk variety you prefer such as almond, soy, dairy, or oat milk depending on dietary preferences.
  • Strong brewed coffee or espresso intensifies the tiramisu flavor; adjust quantity based on your caffeine preference.
  • The protein powder adds nutritional value but can be omitted or swapped for other flavors if desired.
  • Sweeteners can be sugar, honey, maple syrup, or sugar substitutes based on your dietary needs.
  • For a vegan version, use plant-based yogurt and milk.
  • Make sure to stir the chia mixture well before refrigerating to prevent clumps.
  • Letting the pudding set overnight gives the best texture and flavor melding.
  • This pudding is perfect for meal prep and can be a nutritious snack or dessert.
