Tirokafteri is a vibrant and spicy Greek feta dip made with roasted bell peppers, creamy feta cheese, Greek yogurt, and a kick of red pepper flakes. This easy-to-make dip blends creamy, tangy, and spicy flavors perfect for serving with pita chips, veggie sticks, or as a flavorful accompaniment to grilled dishes.

Ingredients

Dip Ingredients

  • 3 roasted bell peppers (jarred or home-roasted)
  • 11 ounces feta cheese
  • ⅔ cup Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons vinegar (apple cider, red wine, or white wine vinegar)
  • 1 clove garlic, grated (more to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 oz (50 g) feta cheese for mashing

Pita Chips (Optional)

  • Pita bread (cut into triangles)
  • Olive oil (for drizzling)

Instructions

  1. Add Ingredients to Food Processor: Combine the roasted bell peppers, 11 ounces of feta cheese, Greek yogurt, olive oil, vinegar, grated garlic, dried oregano, and red pepper flakes in a food processor.
  2. Blend Until Creamy: Process the mixture for about 2 minutes until smooth and creamy in texture.
  3. Mash Extra Feta: In a serving bowl, use a fork to mash the reserved 2 oz (50 g) feta cheese to create a rich, chunky texture and stir it into the blended dip.
  4. Garnish and Serve: Sprinkle a pinch of oregano and red pepper flakes on top, drizzle with good quality olive oil, and serve with crispy pita chips, veggie sticks, or alongside grilled foods.
  5. Optional – Make Pita Chips: Cut pita bread into triangles, toss with a drizzle of olive oil, and toast in the oven at 400°F (204°C) or air fryer at 400°F (200°C) until crunchy, approximately 5-10 minutes.

Notes

  • Substitutions: Use non-dairy feta and Greek-style yogurt to make this dip dairy-free.
  • Vinegar Choices: Apple cider, red wine, or white wine vinegar work well to add tanginess.
  • Boost Texture: Adding mashed feta after blending enhances richness and provides a chunkier bite.
  • Don’t Hold Back on Vinegar: A generous splash of vinegar balances the flavors and adds a crave-worthy tang.
  • Home Roasting Peppers: Roast bell peppers in the oven at 430°F (220°C) for 40 minutes or in an air fryer at 400°F (200°C) for 20 minutes for the best flavor.
  • Storage: Store leftovers in an airtight container in the fridge for 4-5 days. The dip will thicken when chilled—whip before serving. Not suitable for freezing.
