Ingredients

Cookie Dough

  • 1 stick butter, softened
  • 1/4 cup oil
  • 1/2 cup granulated sugar (100g)
  • 2 tbsp powdered sugar
  • 1 egg, at room temperature
  • 1 tbsp lime juice
  • 1 tbsp lime zest
  • 3/4 tsp coconut flavoring
  • 2 & 1/3 cups flour (228g)
  • 1/4 tsp salt
  • 1 tsp baking powder

Lime Buttercream

  • 6 tbsp butter, softened (57g)
  • 1 cup powdered sugar
  • 2 tbsp lime juice, cold
  • 1 tsp lime zest
  • Lime wedges for decoration

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside for later.
  2. Cream butter and sugars: In a large mixing bowl or stand mixer, cream together the softened butter, oil, granulated sugar, and powdered sugar until light and fluffy, ensuring the mixture is smooth and well combined.
  3. Add wet flavorings: Incorporate the egg, lime juice, lime zest, and coconut flavoring into the creamed sugar and butter mixture. Mix thoroughly until everything is evenly combined.
