Tropical Passionfruit Bliss Tarts offer a delightful slice of paradise with a crisp puff pastry shell filled with a luscious, tangy passionfruit curd, topped with toasted shredded coconut. Perfectly balanced between sweet and tart, these tarts bring a vibrant tropical flavor ideal for summer gatherings or an elegant dessert.

Ingredients

Puff Pastry Shell

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Passionfruit Curd

  • ½ cup passion fruit pulp, fresh or frozen
  • 2 large eggs
  • ½ cup sugar
  • 2 tbsp unsalted butter, cubed

Toppings

  • ¼ cup shredded coconut, lightly toasted

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the tart shells.
  2. Prepare Pastry Shells: Cut the thawed puff pastry sheet into circles sized to fit mini tart pans or a muffin tin. Press the pastry circles gently into the pans to form the tart bases.
  3. Apply Egg Wash: Brush the edges of the puff pastry shells with the beaten egg wash to ensure a shiny, golden finish after baking.
  4. Blind Bake: Place parchment paper and pie weights or dried beans into each pastry shell to prevent puffing. Bake for 12 to 15 minutes until the pastry is golden and set. Remove from oven and allow shells to cool.
  5. Make Passionfruit Curd: In a saucepan, whisk together passionfruit pulp, sugar, and eggs. Cook over medium-low heat, stirring constantly until the mixture thickens into a smooth curd.
  6. Finish the Curd: Remove from heat and stir in the cubed unsalted butter until fully melted and the curd is smooth and glossy. Let it cool slightly to room temperature.
  7. Assemble the Tarts: Spoon the passionfruit curd carefully into each baked pastry shell. Smooth the surface with the back of a spoon or a spatula.
  8. Add Toppings and Serve: Sprinkle the lightly toasted shredded coconut evenly on top of each tart. Serve chilled for best flavor and texture.

Notes

  • Store the tarts refrigerated and serve chilled to enjoy the best texture and flavor.
  • For variety, substitute the passionfruit curd with mango, guava, or pineapple curd for a tropical twist.
  • To make this recipe vegan, use vegan puff pastry and replace the eggs with a cornstarch-based curd alternative.
