Tuscan Butter Mushrooms is a creamy, flavorful skillet dish featuring tender baby bella mushrooms, sweet cherry tomatoes, and fresh spinach simmered in a rich butter and Parmesan cheese sauce, finished with fragrant garlic, tomato paste, and a hint of crushed red pepper flakes. This quick and easy recipe makes a perfect side or light main course with fresh basil garnish.

Ingredients

Butter and Aromatics

  • 4 Tbsp. butter
  • 2 cloves garlic, minced
  • 1 Tbsp. tomato paste

Vegetables

  • 1 lb. baby bella mushrooms, cleaned
  • 1 cup cherry tomatoes, halved
  • 3 cups spinach

Dairy and Seasoning

  • 3/4 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch crushed red pepper flakes
  • Thinly sliced basil, for garnish

Instructions

  1. Melt Butter and Sauté Aromatics: In a large skillet over medium heat, melt the butter. Add the minced garlic and tomato paste, cooking until fragrant, about 1 minute, to build a rich flavor base.
  2. Cook Mushrooms and Tomatoes: Add the cleaned baby bella mushrooms and halved cherry tomatoes to the skillet. Cook for about 5 minutes until the mushrooms become tender and the tomatoes start to burst, releasing their juices.
  3. Add Cream and Cheese: Pour in the heavy cream and stir in the freshly grated Parmesan cheese. Season the mixture with kosher salt, freshly ground black pepper, and a pinch of crushed red pepper flakes. Bring the sauce to a gentle simmer.
  4. Wilt Spinach and Thicken Sauce: Add the fresh spinach to the skillet and cook for about 5 minutes until the sauce thickens and the spinach is wilted, stirring occasionally to combine all ingredients evenly.
  5. Garnish and Serve: Remove the skillet from heat and garnish the dish with thinly sliced fresh basil. Serve immediately while warm.

Notes

  • Use baby bella mushrooms for a rich, earthy flavor, but cremini or white mushrooms can be substituted.
  • Adjust the amount of crushed red pepper flakes to control the heat level according to your preference.
  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free cream alternative.
  • This dish pairs well with crusty bread, pasta, or as a side to grilled meats.
  • Ensure mushrooms are cleaned gently with a damp cloth or quick rinse to avoid sogginess.
