These Tuscan Garlic Chicken Pita Pizzas are a delightful and quick meal option featuring creamy garlic Parmesan sauce, tender chicken, sun-dried tomatoes, spinach, and melted mozzarella on crispy pita bread. Perfect for a flavorful weeknight dinner or a tasty appetizer.

Ingredients

Sauce Ingredients

  • 1 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 ½ teaspoons Italian seasoning
  • 2/3 cup freshly grated Parmesan cheese
  • 1/2 Tablespoon all-purpose flour
  • 1 Tablespoon water
  • 1/4 teaspoon black pepper

Pizza Ingredients

  • 6 Flatbreads or Pita Breads (I like the Papa Pita brand)
  • 2 cups cooked chicken (Costco Bare Life chicken nuggets, cooked then chopped)
  • 1 ½ cups sun-dried tomatoes
  • 1 ½ cups baby spinach leaves, torn
  • 2 cups shredded Mozzarella cheese

Instructions

  1. Preheat Oven or Air-Fryer: Preheat your oven or air fryer to 350 degrees F to prepare for baking the pita pizzas.
  2. Make the Sauce: In a medium saucepan, combine heavy cream, chicken broth, minced garlic, Italian seasoning, Parmesan cheese, and black pepper. Stir to mix evenly.
  3. Thicken the Sauce: In a small bowl, whisk together the flour and water to form a slurry. Pour this slurry into the saucepan with the sauce, then cook over medium heat, whisking continuously until the sauce thickens. Remove from heat and cover to keep warm.
  4. Prepare Pita Breads: Lay the pita breads flat on a clean surface. Spread 3 tablespoons of the prepared sauce evenly over each pita.
  5. Add Toppings: Top each pita with 1/3 cup of chopped chicken, 1/4 cup sun-dried tomatoes, and 1/4 cup torn baby spinach leaves. Sprinkle approximately 1/3 cup shredded mozzarella cheese over the top.
  6. Bake in Oven: If using an oven, place the pita pizzas on greased baking sheets and bake for 10 to 12 minutes or until the cheese has melted.
  7. Cook in Air-Fryer: If using an air fryer, place one pita pizza on the air fryer tray and cook for 5 to 6 minutes, until the cheese is melted and bubbly.
  8. Serve: Serve the pita pizzas warm alongside the remaining sauce for dipping. Enjoy this delicious Tuscan-inspired meal!

Notes

  • For best results, use fresh Parmesan cheese and mozzarella for rich flavor and proper melting.
  • You can substitute the chicken nuggets with any cooked chicken of your choice.
  • The sauce can be prepared ahead of time and reheated before assembling the pizzas.
  • If you don’t have sun-dried tomatoes, roasted red peppers can be a tasty alternative.
  • Adjust seasoning and cheese amounts to your preference for a milder or more robust flavor.
