This Tuscan “Marry Me” Butter Beans recipe is a creamy, savory vegan dish featuring tender butter beans simmered with sun-dried tomatoes, aromatic herbs, and coconut cream. It’s flavored with vegan butter, shallots, garlic, and a hint of chili flakes for a gentle warmth. Nutritional yeast adds a cheesy depth while fresh basil brightens the dish. Perfect as a comforting main or side, served alongside toasted bread for a satisfying meal.

Ingredients

Butter Bean Mixture

  • 2 Tablespoons vegan butter
  • 1 large shallot, peeled & finely diced
  • 4 cloves garlic, minced
  • ⅓ cup sun-dried tomatoes, marinated in oil & chopped
  • 1 Tablespoon tomato paste
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon chili flakes
  • 15 ounces canned butter beans (include the liquid from the can)
  • 2 Tablespoons coconut cream
  • 1 Tablespoon nutritional yeast
  • ½ Tablespoon lemon juice
  • 2 Tablespoons chopped fresh basil
  • Salt & pepper to taste

Instructions

  1. Prepare Ingredients: Finely dice the shallot, chop the sun-dried tomatoes, and mince the garlic (using a garlic press is recommended for ease and uniformity).
  2. Melt Butter and Sauté Aromatics: In a large pot, melt the vegan butter over medium heat until sizzling. Add the diced shallots and minced garlic, then sauté for 2-3 minutes until fragrant and softened.
  3. Add Sun-Dried Tomatoes and Spices: Stir in the chopped sun-dried tomatoes, tomato paste, dried oregano, dried thyme, and chili flakes. Cook for about 1 minute, allowing the flavors to combine with the shallots and garlic.
  4. Add Beans and Creamy Ingredients: Pour in the entire can of butter beans with their liquid (do not strain). Add the coconut cream, nutritional yeast, and lemon juice. Stir well to combine.
  5. Simmer to Thicken: Bring the mixture to a simmer, then cook for about 5 minutes, allowing the sauce to thicken and the beans to cook through.
  6. Finish and Season: Stir in the fresh chopped basil and season with salt and pepper according to your taste.
  7. Serve: Serve the warm butter beans alongside a big slice of toasted bread for a hearty meal. Enjoy!

Notes

  • Use the liquid from the canned butter beans to ensure a creamy sauce; do not drain or rinse the beans.
  • For extra flavor, use sun-dried tomatoes marinated in oil.
  • If vegan butter is not available, substitute with olive oil.
  • Leftovers can be refrigerated in a sealed container for 3-4 days or frozen for up to 1 month.
  • Serve with toasted bread to soak up the flavorful sauce.
