A refreshing and creamy Tzatziki Chicken Salad made with Greek yogurt, fresh herbs, crisp cucumbers, and tender cooked chicken. Perfect as a light lunch or dinner served over greens, in pita pockets, or wraps.

Ingredients

Dressing and Base

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad Mix-Ins

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Make the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber (with excess moisture squeezed out), lemon juice, grated garlic, chopped fresh dill, chopped fresh parsley, sea salt, and freshly ground black pepper. Stir thoroughly until all ingredients are well incorporated and the mixture is creamy.
  2. Add the Chicken and Vegetables: To the bowl with the dressing, add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese. Stir everything together until all ingredients are evenly combined and coated with the tzatziki dressing.
  3. Adjust Seasoning and Serve: Taste the salad and add additional lemon juice, sea salt, or black pepper as needed to suit your preference. Serve the Tzatziki Chicken Salad over fresh greens, with pita chips, stuffed in pita pockets, wrapped in lettuce cups, or as a sandwich or wrap filling. For added flavor, top with chopped tomatoes, kalamata olives, extra feta, and fresh herbs as desired.
