Ingredients

Base

  • 2 naan breads

Protein

  • 1 cup cooked chicken, shredded

Tzatziki Sauce

  • 1 cup plain yogurt (for making tzatziki)
  • 1 small cucumber, grated and excess water squeezed out
  • 1-2 garlic cloves, minced
  • 1 tablespoon fresh dill or mint, chopped
  • Salt and pepper, to taste

Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup feta cheese, crumbled

Other

  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Prepare the tzatziki sauce: Grate one small cucumber and squeeze out the excess water using a clean kitchen towel or cheesecloth. In a bowl, mix the grated cucumber with plain yogurt, minced garlic, chopped fresh dill or mint, salt, and pepper to taste. Stir well to combine and set aside.
  2. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the naan pizzas. This temperature will help achieve a crispy crust and warm toppings.
  3. Assemble the pizza: Lay out the naan breads on a baking sheet. Spread a generous layer of the prepared tzatziki sauce evenly over each naan. Top with shredded cooked chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and crumbled feta cheese. Drizzle with olive oil and sprinkle dried oregano, salt, and pepper over the toppings.
  4. Bake the pizzas: Place the assembled naan pizzas in the preheated oven and bake for 10-12 minutes. The naan should become crispy, and the cheese will start to melt, melding the flavors together beautifully.
  5. Serve and garnish: Remove the pizzas from the oven and garnish with fresh parsley. Serve warm immediately to enjoy the full vibrant flavors and crisp textures.

Notes

  • For a homemade touch, prepare tzatziki fresh using Greek yogurt, grated cucumber, garlic, and herbs.
  • You can substitute cooked chicken with rotisserie chicken for convenience.
  • Adjust the toppings as desired, adding olives or bell peppers for extra flavor.
  • Ensure the cucumber used in tzatziki is well-drained to avoid watery sauce.
  • Serve immediately after baking for the best texture and taste.
