Perfect for a comforting winter breakfast or brunch, this baked oatmeal combines nutty browned butter with wholesome oats and a hint of maple sweetness for a satisfying and flavorful start to your day.

Ingredients

Wet Ingredients:

  • ¼ cup butter
  • 2 eggs
  • ¼ cup pure maple syrup
  • 1 ¾ cups unsweetened almond milk (or any milk of choice)
  • 1 tablespoon vanilla extract

Dry Ingredients:

  • 2 cups old fashioned rolled oats
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Mix-ins:

  • 2 small to medium ripe Bartlett pears, diced (about 1 ½ cups diced pears)

Optional:

  • ¼ cup finely diced walnuts (or substitute pecans)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with oil or nonstick cooking spray and set aside to ensure the oatmeal doesn’t stick during baking.
  2. Brown the Butter: In a small saucepan over medium heat, melt the butter. Stir constantly as it begins to crackle and foam. Continue whisking until the butter turns a golden amber color and emits a nutty aroma, about a few minutes. Remove from heat and let it cool for 5 minutes to prevent cooking the eggs later.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, pure maple syrup, almond milk, and vanilla extract until well combined.
  4. Combine Dry Ingredients: To the wet mixture, add the rolled oats, cinnamon, baking powder, and salt. Stir these together until evenly incorporated.
  5. Add Pears and Browned Butter: Fold in the diced pears gently, followed by the cooled browned butter. Mix until everything is thoroughly combined.
  6. Assemble and Bake: Pour the oatmeal mixture into the prepared pan and smooth the surface with a spatula. Sprinkle the finely diced walnuts or pecans evenly over the top if using. Bake in the preheated oven for 35 to 45 minutes, or until the edges are golden brown and the center is fully set.
  7. Cool and Serve: Remove from the oven and let the baked oatmeal cool for about 10 minutes. Cut into 6 slices and serve warm for the best flavor experience.

Notes

  • For a dairy-free version, substitute the butter with vegan butter or melted coconut oil, but avoid browning these alternatives as they do not brown like regular butter.
  • To make this recipe gluten-free, ensure you use certified gluten-free rolled oats.
  • Boost the protein content by adding 1 scoop of your favorite protein powder, such as collagen peptides, before baking. This will increase the protein to over 10g per serving.
  • This baked oatmeal freezes well; freeze individual slices and reheat for a quick, nourishing breakfast anytime.
