Ingredients

Instructions

  2. Prepare Wet Mixture: In a large mixing bowl, whisk together the granulated sugar, eggs, whole milk, melted unsalted butter (cooled), and vanilla extract until well combined.
  3. Form the Dough: Gradually add the all-purpose flour and a pinch of salt to the wet mixture while stirring continuously. Once mostly combined, knead the dough either by hand or with a dough hook on a mixer for 5 to 7 minutes until the dough is smooth and elastic. If the dough feels sticky, incorporate additional flour one tablespoon at a time as needed.
  4. First Rise: Place the kneaded dough into a greased bowl. Cover the bowl with a clean towel or plastic wrap. Allow the dough to rise in a warm spot for 1 to 2 hours, or until it has doubled in size.
  5. Shape the Beignets: On a lightly floured surface, roll out the dough to approximately ½ inch thickness. Cut the dough into 2-inch squares or your preferred shapes using a sharp knife or pastry cutter.
  6. Heat the Oil: In a deep pot or deep fryer, heat vegetable or canola oil to 350°F (175°C). Use a thermometer to maintain this consistent temperature throughout frying for even cooking.
  7. Fry the Beignets: Carefully place a few dough squares into the hot oil, ensuring not to overcrowd the pot. Fry the beignets for 2 to 3 minutes per side, or until they become golden brown and puffed up. Remove with a slotted spoon and transfer onto paper towel-lined plates to drain excess oil.
