This Vegan and Gluten-Free Taco Pizza is a flavorful Tex-Mex inspired dish perfect for a pizza night. Made with protein-rich chickpea-based gluten-free crusts topped with refried beans, dairy-free vegan cheese, fresh veggies, and a hint of enchilada sauce, this pizza is both hearty and healthy. It’s easy to prepare, baked to perfection, and can be customized with optional avocado, guacamole, and dairy-free sour cream for extra creaminess.

Ingredients

Pizza Base

  • 2 gluten free pizza crusts (Banza crusts recommended for extra protein)

Toppings

  • 1 can refried beans (vegan/vegetarian, no added lard)
  • ⅔ cup salsa
  • 8 oz vegan cheese shreds (Mexican style or cheddar)
  • ¼ cup red enchilada sauce
  • ½ green bell pepper, diced
  • ½ yellow bell pepper, diced
  • ¼ red onion, diced
  • Roma tomatoes, diced (quantity about 1 medium tomato)

Optional Toppings

  • Dairy-free sour cream
  • Avocado slices or guacamole

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to get it ready for baking the pizzas.
  2. Prepare Vegetables: Dice the green and yellow bell peppers, red onion, and Roma tomatoes into small pieces for topping.
  3. Mix Refried Bean Sauce: In a medium-sized bowl, combine the refried beans, half a cup of salsa, 1 teaspoon onion powder, and a dash of salt and pepper. Stir well until the mixture is smooth and evenly combined.
  4. Assemble the Pizza: Spread about ½ cup of the refried bean mixture evenly over each gluten-free pizza crust. Next, sprinkle a generous layer of vegan cheese shreds on top, followed by the diced bell peppers and onions.
  5. Add Enchilada Sauce: Lightly drizzle ¼ cup of red enchilada sauce over the assembled toppings for an extra burst of Tex-Mex flavor.
  6. Bake the Pizza: Place the pizzas in the preheated oven and bake for 10 minutes, or until the cheese has melted and toppings are heated through.
  7. Cool and Add Final Toppings: Remove the pizzas from the oven and let them cool for an additional 5 minutes. Add optional toppings like shredded lettuce, sliced avocado or guacamole, diced Roma tomatoes, and dairy-free sour cream if desired.
  8. Serve: Use a pizza cutter to slice into portions and enjoy your delicious vegan and gluten-free taco pizza!
