This Vegan Apple Crisp is a warm, sweet dessert featuring a tender apple filling spiced with cinnamon and vanilla, topped with a gluten-free oat and cashew butter crumble. Perfectly sweetened with maple syrup, it’s a comforting, plant-based treat that’s both dairy-free and gluten-free.

Ingredients

Filling

  • ¾ cup maple syrup
  • ½ cup cashew butter
  • ¼ teaspoon sea salt
  • 2 ½ cups red apples, peeled and chopped
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons cinnamon

Topping

  • 2 cups gluten free rolled oats
  • ½ cup cashew butter
  • ½ cup maple syrup
  • ½ teaspoon sea salt or regular salt

Instructions

  1. Preheat Oven: Preheat your oven to 350º F (175º C) to ensure it’s hot and ready for baking the crisp.
  2. Prepare Filling: In a large bowl, combine ¾ cup maple syrup, ½ cup cashew butter, and ¼ teaspoon sea salt. Mix well until smooth. Add the peeled and chopped apples, vanilla extract, and cinnamon, stirring thoroughly to coat the apples evenly with the mixture.
  3. Transfer to Baking Dish: Pour the apple mixture into a medium-sized baking dish, spreading it out evenly to create the base layer for your crisp.
  4. Prepare Topping: In another large bowl, stir together 2 cups gluten-free rolled oats, ½ cup cashew butter, ½ cup maple syrup, and ½ teaspoon salt until well combined. Using your hands to mix and crumble the topping works best for even distribution.
  5. Assemble the Crisp: Spread the oat topping evenly over the apple mixture in the baking dish, covering it completely to ensure a crispy, golden crust.
  6. Bake: Place the baking dish in the preheated oven and bake for 35 minutes or until the topping is golden brown and crisp on top.
  7. Serve: Remove from oven and let cool slightly before serving. Enjoy plain or with your favorite plant-based whipped cream or ice cream for an extra indulgence.

Notes

  • Apples: Honeycrisp apples are ideal for sweetness and texture, but any red apple will work. Green apples can be used but may make the crisp tarter.
  • Butter Substitute: Cashew butter is recommended for its creamy texture and flavor, but you can substitute with regular butter or vegan butter if preferred.
  • Mixing Option: For an even crumble texture, pulse the topping ingredients briefly in a food processor instead of mixing by hand.
  • Serving Suggestions: Serve with keto whipped cream (note: not vegan), plant-based whipped cream, or your favorite plant-based ice cream for an extra treat.
