Caramelized Onions & Spinach

  • 1 large onion, sliced
  • 4 cups spinach, loosely packed
  • 2 Tablespoons vegan butter
  • Salt & pepper to taste

Bun Filling

  • ⅔ cup tomato sauce
  • 8-10 fresh basil leaves, torn
  • 1-2 Tablespoons nutritional yeast (optional)

Instructions

  1. Activate the Yeast: In a mixing bowl, whisk together the warmed almond milk and sugar. Add the active dry yeast and whisk once more. Let the mixture sit for 5 minutes until bubbles form, confirming the yeast is activated.
  2. Prepare the Dough: Once the yeast is active, whisk in the oil along with dried oregano, garlic powder, and dried basil. Gradually add the flour (half a cup at a time) and salt, mixing until a thick dough forms.
  3. Knead the Dough: If using a stand mixer, knead the dough with a bread hook on medium speed for 5-7 minutes until elastic and no longer sticking to the bowl. If kneading by hand, transfer the dough to a floured surface and knead for 5-7 minutes until tacky, but not sticky and stretchable without tearing.
  4. First Rise: Shape the dough into a ball, place it in a lightly oiled bowl, cover with plastic wrap, and refrigerate for 24-48 hours to rise slowly and develop flavor.
  5. Prepare Caramelized Onions & Spinach: While the dough rises, melt vegan butter in a large frying pan over low heat. Add sliced onions and cook gently for 20-30 minutes, stirring frequently, until onions are soft, sweet, and golden brown. Add spinach and cook for an additional 2 minutes until wilted. Season with salt and pepper and set aside.
  6. Second Rise: About one hour before baking, remove dough from fridge and punch it down. Reform into a ball and let it rise at room temperature for 1 hour to reactivate.
  7. Preheat Oven: Heat the oven to 375°F (190°C).
  8. Shape the Dough: On a lightly floured surface, roll out the dough into a half-inch thick rectangle. Spread the tomato sauce evenly over the dough, leaving a 2-inch border around the edges.
