A delicious vegan take on classic disco fries featuring crispy baked fries topped with melted vegan mozzarella and a rich, creamy vegan gravy made from coconut milk and spices. This comforting dish is perfect for a cozy meal or sharing with friends.

Ingredients

For the Gravy:

  • ¾ cup vegetable broth
  • ½ cup full fat coconut milk
  • 5 tablespoons vegan butter
  • 2 tablespoons flour (use gluten-free if needed)
  • 3 teaspoons vegan Worcestershire sauce
  • 2 tablespoons Tamari
  • 2 teaspoons mustard powder
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt, to taste
  • Pepper, to taste

For the Fries:

  • 26 oz bag of fries (fresh or frozen)
  • 5 oz vegan mozzarella, shredded
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat Oven and Bake Fries: Preheat your oven to 410°F (210°C). Distribute the fries evenly on a baking sheet lined with parchment paper and bake them according to the package instructions until golden and crispy.
  2. Prepare the Vegan Gravy: About halfway through baking the fries, melt the vegan butter in a saucepan over medium heat. Whisk in the flour carefully to form a roux. Gradually add the vegetable broth and coconut milk while whisking continuously to avoid lumps. Stir in the mustard powder, garlic powder, onion powder, paprika, vegan Worcestershire sauce, and tamari sauce. Season with salt and pepper to taste. Let the gravy simmer on low heat, stirring frequently, until it thickens into a creamy consistency.
  3. Season Fries: Once the fries are done baking, ensure they are crisp and golden. Remove them from the oven, then season with salt and pepper as desired.
  4. Combine Fries and Cheese: Transfer the baked fries to a 10-inch round casserole dish. Sprinkle the shredded vegan mozzarella evenly over the fries.
  5. Melting the Cheese: Return the casserole dish to the oven and bake for an additional 5 minutes or until the vegan cheese is melted and slightly bubbly.
  6. Serve with Gravy: Pour a generous amount of the prepared vegan gravy over the cheesy fries. Serve immediately in bowls or on plates, or enjoy directly from the casserole dish for a cozy experience.

Notes

  • Use gluten-free flour if you need this recipe to be gluten-free.
  • For extra crispiness, spread fries in a single layer without overlapping.
  • Adjust spice levels in the gravy to suit your preference.
  • Try using fresh fries cut from potatoes if you prefer homemade fries.
  • Vegan Worcestershire sauce and Tamari add depth and umami; do not skip them.
