A fresh and zesty vegan pasta dish featuring tender artichoke hearts, bright lemon juice, and fragrant garlic, tossed with gluten-free pasta for a light and flavorful meal that’s perfect for a quick weeknight dinner.

Ingredients

Pasta

  • 12 ounces gluten-free linguine, fettuccine, or penne

Sauce and Toppings

  • 2 Tablespoons extra virgin olive oil, divided
  • 3 cloves garlic, minced
  • 12 ounces frozen artichoke hearts
  • 1 Tablespoon capers
  • Salt and pepper, to taste
  • 2 Tablespoons lemon juice (approximately the juice of 1 lemon)
  • 1 cup fresh parsley, chopped

Instructions

  1. Cook the pasta: Prepare the pasta according to the package directions until al dente. Once cooked, drain the pasta and return it to the pot to keep warm.
  2. Heat oil in skillet: While the pasta cooks, heat 1 tablespoon of extra virgin olive oil in a skillet over medium heat to prepare for sautéing the aromatics and vegetables.
  3. Sauté garlic: Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Cook artichoke hearts: Add the frozen artichoke hearts to the skillet and sauté until they are heated through and develop a slight browning on the outside, enhancing their flavor and texture.
  5. Add capers and season: Stir in the capers, and season the mixture with salt and pepper to taste, allowing the flavors to meld together.
  6. Combine with pasta: Transfer the artichoke and garlic mixture from the skillet into the pot with the cooked pasta, mixing thoroughly to coat the pasta.
  7. Finish with lemon and parsley: Add the remaining tablespoon of olive oil, the fresh lemon juice, and chopped parsley to the pasta. Toss everything well to combine all the flavors evenly before serving.

Notes

  • For best results, use gluten-free pasta if avoiding gluten.
  • Frozen artichoke hearts can be substituted with canned if preferred; just ensure they are well-drained.
  • Adjust the amount of lemon juice for more or less tanginess according to your taste.
  • Serve immediately for the freshest texture and flavor.
  • Optional: Add red pepper flakes for a bit of heat.
