This creamy and flavorful Lentil Curry combines tender lentils with aromatic spices, coconut milk, and a hint of tomato for a comforting vegan dish that is perfect for an easy weeknight meal or a satisfying lunch.

Ingredients

Main Ingredients

  • 1 (15 oz) can lentils, drained
  • 5 cloves garlic, minced
  • 3/4 cup onions, diced
  • 4 Tbsp vegan butter
  • 1/2 cup full fat coconut milk
  • 1/3 cup crushed tomatoes
  • 1 Tbsp curry powder
  • 1/2 tsp mustard powder
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Sauté Aromatics: In a pot or casserole, melt the vegan butter over medium heat. Add the diced onions and minced garlic and fry for about 3 minutes until the onions become translucent and fragrant.
  2. Add Spices and Lentils: Stir in the drained lentils, crushed tomatoes, ground ginger, curry powder, ground cumin, and mustard powder. Season with salt and pepper to taste. Cook the mixture for an additional 4 minutes on medium heat, allowing the flavors to combine.
  3. Simmer with Coconut Milk: Pour in the full-fat coconut milk and stir well. Let the curry simmer gently for one more minute to heat through and meld the flavors together before serving.

Notes

  • For a thicker curry, simmer for a few extra minutes to reduce liquid.
  • Adjust spice levels according to your preference by varying curry and mustard powders.
  • This dish pairs well with steamed rice or flatbreads.
  • Use fresh spices for more vibrant flavor.
  • Can be stored in the refrigerator for up to 3 days and reheated gently.
