The recipe is easy to prepare on the stovetop in just a few minutes, making it a quick, nutritious, and satisfying meal option that is both gluten-free and vegan.

Ingredients

Base Ingredients

  • 2 teaspoons Olive Oil
  • ½ Yellow Onion, diced
  • 1 ¼ cup Cooked Brown Lentils (equivalent to 1 can, 15 oz, rinsed and drained)
  • 1 ¼ cup Cauliflower Rice (fresh or frozen)

Spices

  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Paprika
  • ½ teaspoon Oregano
  • ¼ teaspoon Chili Powder

Liquids and Sauces

  • ¼ cup Vegetable Broth
  • 3-4 tablespoons Vegan Worcestershire Sauce or 1 tablespoon Tamari Sauce
  • ½ cup Tomato Paste

Instructions

  1. Heat Olive Oil and Sauté Onion: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced yellow onion and stir fry until fragrant and softened, about 1 minute.
  2. Add Lentils and Cauliflower Rice: Stir in the cooked, drained brown lentils and cauliflower rice. Continue stir-frying the mixture for another 1 minute to combine flavors and heat through.
  3. Add Spices: Sprinkle in the cumin, garlic powder, paprika, oregano, salt, and chili powder. Stir well to evenly distribute the spices throughout the mixture.
  4. Add Tomato Paste, Broth, and Sauce: Mix in the tomato paste, vegetable broth, and vegan Worcestershire sauce (or tamari sauce). Stir the ingredients thoroughly, making sure the paste is fully incorporated.
  5. Simmer the Mixture: Reduce the heat to low and simmer for 5-6 minutes, stirring occasionally, until the mixture thickens to your desired consistency. For a thicker, dryer sauce, cook longer; for a smoother sauce, stop simmering after 3-4 minutes.
  6. Serve: Serve the lentil taco meat hot, ideally with vegan, gluten-free flatbread or as filling for tacos, wraps, or bowls. Follow your favorite vegan taco recipes for additional serving ideas.

Notes

  • Cauliflower Rice: Use ready-made frozen cauliflower rice or make your own by pulsing fresh cauliflower florets in a food processor until rice-sized.
  • IBS-Friendly Option: Replace cauliflower rice with finely chopped walnuts for a low-FODMAP alternative.
  • Cooking Lentils: If using dried brown lentils instead of canned, make sure to cook according to package instructions before using.
  • Oven Mode Note: When baking flatbread or other sides, use fan-forced (convection) mode. If using conventional oven mode, increase temperature by 25°F (15°C) and monitor baking time.
