This Vegan Rotel Dip is a creamy, flavorful, and easy-to-make appetizer that uses plant-based ingredients to deliver the classic spicy and cheesy taste of traditional Rotel dip. Perfect for game day or casual gatherings, this recipe combines sautéed vegan ground crumbles, seasoned white beans, vegan cheeses, and diced tomatoes with green chilies to create a rich and satisfying dip ready in under 30 minutes.

Ingredients

Base Ingredients

  • 1/2 tbsp olive oil
  • 1/2 cup white onions (75g), diced
  • 2 medium garlic cloves, minced

Protein & Seasonings

  • 12-16 ounce vegan ground crumbles (340g), beef or sausage style
  • 1 tbsp taco seasoning
  • 1/2 tsp chili powder
  • 1/4 tsp ground turmeric

Beans & Liquids

  • 15 ounce canned white beans (439g), drained
  • 1/4 cup low-sodium vegetable broth (60ml)
  • 1/4 cup water or additional broth (optional, as needed during cooking)

Cheeses & Tomatoes

  • 10 ounce can of Ro-tel original (283g) (diced tomatoes and green chilies)
  • 7-8 ounce vegan cheddar shreds (227g)
  • 8 ounce vegan cream cheese like Miyokos (227g)

Garnish

  • Jalapeño slices (for garnish)

Instructions

  1. Prepare Ingredients: Remove the vegan cream cheese from the refrigerator to bring it to room temperature. Dice the white onions and mince the garlic cloves. Drain the canned white beans.
  2. Make Bean Puree: In a blender, combine the drained white beans and 1/4 cup low-sodium vegetable broth. Blend until smooth and creamy to create the bean base for the dip.
  3. Sauté Aromatics and Vegan Crumbles: Heat a large skillet or sauté pan over medium-high heat and add the olive oil. Sauté the diced onions and vegan ground crumbles until the onions are softened, about 3-4 minutes. Add the minced garlic, taco seasoning, chili powder, and turmeric. Stir and cook for an additional 2-3 minutes to allow the spices to bloom.
  4. Combine and Simmer: Lower the heat to medium-low. Add the pureed white beans, vegan cheddar shreds, vegan cream cheese, and the can of Ro-tel (diced tomatoes with green chilies) to the skillet. Stir well to combine all ingredients.
  5. Cook Dip Until Creamy: Continue cooking the mixture for 10-15 minutes, stirring occasionally to prevent sticking. The dip will initially be thick but will loosen as the vegan cheese melts. If it starts to dry out before fully melting, add up to 1/4 cup of water or vegetable broth to maintain the desired consistency.
  6. Serve and Garnish: Once the dip is hot and cheesy, remove from heat. Garnish with sliced jalapeños for an extra kick. Serve warm with tortilla chips or fresh vegetables for dipping.

  • Bringing vegan cream cheese to room temperature helps it melt more smoothly into the dip.
  • If you cannot find vegan ground crumbles, chopped mushrooms or crumbled tofu can be used as alternatives.
  • Adjust the spice level by controlling the amount of Ro-tel and jalapeño garnish.
