Ingredients

Salisbury Steaks

  • 12 oz vegan ground beef (340g)
  • 1/3 cup bread crumbs such as panko, or crushed crackers (20g)
  • 1 tbsp ketchup or tomato paste
  • 1 tsp vegan Worcestershire sauce
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil for the skillet

Gravy

  • 1 small sweet onion, sliced
  • 8 oz cremini mushrooms, thinly sliced (227g)
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp vegan butter
  • 2 tbsp flour
  • 2 cups water (473ml)
  • 1 tbsp ketchup
  • 1/2 tbsp no-beef bouillon or vegetable bouillon
  • 1 tsp vegan Worcestershire sauce
  • 1 tsp Dijon mustard

Instructions

  1. Mix the Steak Ingredients. In a large bowl, combine the vegan ground beef, bread crumbs, ketchup, vegan Worcestershire sauce, onion powder, and garlic powder. Stir until well incorporated to form the steak mixture.
  2. Form and Sear Patties. Heat a large skillet over medium-high heat. Roll the mixture into 4 equal balls and flatten them into patties. Add olive oil to the skillet, then place the patties in the pan. Cook each side for 2-3 minutes until browned. Remove patties and set aside on a plate.
  3. Sauté Onions and Mushrooms. Add the sliced onions to the skillet and cook for about 3 minutes until they begin to soften. Then add the sliced mushrooms and stir frequently as they cook for 5 minutes more. Add minced garlic, dried thyme, dried rosemary, salt, and pepper. Stir and cook for an additional minute until fragrant.
  4. Create the Gravy Base. Stir in the vegan butter and allow it to melt. Sprinkle in the flour, stirring well to coat the vegetables. Pour in a small amount of water to deglaze the pan, scraping up any browned bits from the bottom.
  5. Simmer the Gravy. Add the remaining water along with ketchup, bouillon, vegan Worcestershire sauce, and Dijon mustard. Stir everything together and bring to a boil. Reduce the heat to medium-low and cook for 5 minutes, allowing the gravy to thicken.
  6. Reheat Patties with Gravy. Place the seared vegan Salisbury steaks back in the skillet with the gravy. Cook for another 10 minutes, occasionally spooning the gravy over the patties to keep them moist and flavorful.
  7. Serve. Enjoy the Vegan Salisbury Steaks hot, ideally served over mashed potatoes, pasta, or rice for a satisfying meal.

Notes

  • Prepare all ingredients ahead of time because this recipe cooks quickly once started.
  • Do not cover the skillet while simmering the gravy, as the goal is to reduce the sauce into a thick, flavorful gravy.
