This creamy, flavorful vegan white queso is made with just six simple ingredients, combining soaked cashews, tender white potatoes, and zesty seasonings to create a smooth, dairy-free dip that’s perfect for tortilla chips or as a topping for your favorite Mexican dishes.

Ingredients

Main Ingredients

  • ¾ cup raw and unsalted cashews
  • 1 ½ cup white potatoes, peeled and diced in small pieces
  • 2 ½ tbsp nutritional yeast
  • 1 ½ tbsp lemon juice
  • 1 ¼ tsp salt, or to taste
  • ¾ cup water
  • 4 oz canned diced green chiles (113 g), mild or spicy
  • ½ red bell pepper, diced in small cubes

Instructions

  1. Soak Cashews: Soak the raw cashews in plenty of fresh water overnight or in boiling water for 20-30 minutes to soften them, then drain thoroughly.
  2. Cook Potatoes: Boil the peeled and diced white potatoes in water for 15-20 minutes, or until they are fully cooked and tender, then drain well.
  3. Blend Ingredients: In a blender, combine the drained cashews, cooked potatoes, lemon juice, salt, nutritional yeast, and water. Blend the mixture until it reaches a very smooth and creamy texture.
  4. Add Chiles and Pepper: Transfer the blended queso to a medium bowl and stir in the canned diced green chiles and diced red bell pepper, reserving some peppers for topping if desired.
  5. Season and Serve: Taste the queso and adjust the seasoning if needed. Serve warm with tortilla chips or drizzle over tacos, enchiladas, burritos, nachos, or Mexican bowls.

Notes

  • If you don’t have time to soak cashews, add them to the boiling potatoes about 10 minutes before they are cooked. Drain both together and blend as usual.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave and add a splash of water to thin the sauce if it thickens.
  • For extra flavor, consider adding chili or chipotle powder, hot sauce, jalapeños, salsa, pico de gallo, or diced tomatoes.
