Ingredients

Fruits

  • 3 small/medium apples

Date Caramel

  • 25-30 Medjool dates

Chocolate Coating

  • 1 1/4 cup chocolate chips
  • 2 tsp coconut oil

Topping

  • 1/2 cup toasted almonds (or another nut)

Instructions

  1. Prepare the Dates: Carefully slice and pit all the Medjool dates to remove the pits and facilitate blending into a caramel-like texture.
  2. Form Date Caramel Wrap: Take about 10 of the pitted dates and arrange them in a square shape on plastic wrap. Use parchment paper on top and a rolling pin to flatten the dates, creating a uniform sheet.
  3. Wrap Apples with Date Caramel: Remove the parchment carefully, then wrap the flattened dates around each apple, squeezing and shifting the dates to cover most of the apple’s surface. Use plastic wrap to help avoid sticking to your hands. Repeat for all three apples.
  4. Melt Chocolate Coating: Melt the chocolate chips with coconut oil either using a double boiler on the stove or in the microwave in 30-second increments until smooth and fully melted.
  5. Dip Apples: Insert a skewer into the top of each date-wrapped apple, then dip into the melted chocolate, coating completely. Place each coated apple onto a parchment paper-lined plate.
  6. Add Toppings & Set: Sprinkle the toasted almonds over the chocolate-coated apples while the coating is still wet. Let the apples sit until the chocolate fully sets and hardens.
  7. Serve: Use a sharp knife to slice the caramel date apples into pieces or enjoy eating directly off the skewer.
