This Viral Chocolate Date Bark is a delicious and healthier alternative to a Snickers bar, featuring layers of sweet Medjool dates, creamy peanut butter, crunchy roasted peanuts, and a rich chocolate shell. Perfect as a nutritious treat, it combines natural sweetness and satisfying textures in an easy-to-make snack.

Ingredients

Dates and Base

  • 20–24 Medjool dates (pitted)

Peanut Layer

  • ⅔ cup creamy peanut butter
  • ½ cup dry roasted peanuts

Chocolate Topping

  • 9 ounces chocolate chips or chocolate bar
  • 1 teaspoon coconut oil (optional)

Optional Garnish

  • Coarse sea salt for topping

Instructions

  1. Prepare Dates: Line a medium-size baking sheet with parchment paper. Slit each Medjool date and remove pits if necessary. Spread the dates evenly on the parchment in a rectangular 4×6 pattern.
  2. Add Peanut Butter Layer: Pour and spread creamy peanut butter evenly over the layer of dates, ensuring full coverage.
  3. Sprinkle Peanuts: Evenly sprinkle the dry roasted peanuts over the peanut butter layer to add crunch.
  4. Melt Chocolate: Place chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each until chocolate is mostly melted and smooth.
  5. Pour Chocolate: Evenly pour the melted chocolate over the peanut butter and peanut layer. Spread gently to cover all ingredients. Optionally, sprinkle coarse sea salt on top.
  6. Freeze: Place the baking sheet in the freezer for 60 to 90 minutes or until the chocolate is fully set.
  7. Cut and Serve: Remove the bark from the freezer. Peel off the parchment paper and transfer the bark to a cutting board. Slice into pieces using a large kitchen knife. Serve and enjoy your healthy chocolate date bark!

Notes

  • Medjool dates are sweeter and softer, perfect for this recipe.
  • Using coconut oil helps the chocolate melt smoothly and sets better.
  • Coarse sea salt enhances the flavor by balancing sweetness.
  • Store bark in an airtight container in the refrigerator or freezer for longer shelf life.
  • Can be customized by substituting peanuts with other nuts if preferred.
