This White Bean Avocado Sandwich is a nutritious and flavorful plant-based lunch option combining creamy avocado, tender white beans, tangy lime, and peppery arugula on wholesome whole grain bread. It’s a quick, no-cook sandwich perfect for meal prep or a light meal that is both satisfying and packed with fiber and healthy fats.

Ingredients

Main Ingredients

  • 1 avocado
  • 1 tablespoon extra virgin olive oil
  • 1 lime, zested and juiced
  • 15 ounce can white beans, rinsed and drained
  • 2 tablespoons red onions, chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup arugula or other greens
  • 4 slices whole grain bread

Instructions

  1. Mash the avocado mixture: Place the avocado, extra virgin olive oil, lime juice, and lime zest in a bowl. Use a fork to mash everything together until the mixture is smooth and creamy.
  2. Add and mash white beans: Add the rinsed and drained white beans to the bowl. Use a fork to mash the beans into the avocado mixture, combining them until integrated but still slightly chunky for texture.
  3. Mix in flavorings: Stir in the chopped red onions and season the mixture with garlic powder, salt, and black pepper. Mix well to evenly distribute the flavors.
  4. Assemble the sandwich: Lay out two slices of whole grain bread and place the arugula evenly on top of them. Spread the white bean and avocado mixture over the arugula.
  5. Finish and serve: Top with the remaining two slices of bread. Slice each sandwich in half and serve immediately for the freshest taste.

Notes

  • Meal prep: Prepare the sandwich mixture in advance and assemble the sandwich 1-2 hours before eating for convenience and flavor melding.
  • Choose ripe avocados for the best creamy texture.
  • Use fresh lime juice and zest to add bright tang to the sandwich filling.
  • Arugula adds a peppery bite, but you can substitute with spinach or mixed greens.
