These White Pizza Grilled Cheese Sandwiches combine the creamy richness of cottage or ricotta cheese blended with flavorful herbs and mozzarella, all grilled to golden perfection on buttery bread. A delightful twist on classic grilled cheese, perfect for lunch or a cozy dinner.

Ingredients

Cheese Mixture

  • ½ cup cottage cheese or ricotta cheese
  • 1 teaspoon olive or canola oil
  • 1 clove garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • 1/16 teaspoon black pepper (optional: up to 1/8 teaspoon)
  • ¼ cup grated Parmesan cheese
  • 8 oz. shredded mozzarella cheese (about 2 cups)

Sandwich

  • 10 to 14 slices of bread (depending on size)
  • About 2 tablespoons softened butter

Instructions

  1. Prepare Cheese Mixture: If using large curd cottage cheese, blend it until mostly smooth to create a creamier base. In a mixing bowl, combine the cottage or ricotta cheese with olive oil to enhance texture and flavor.
  2. Add Herbs and Seasonings: Stir in minced garlic, dried basil, dried oregano, salt, black pepper, and grated Parmesan cheese. Mix these ingredients well to distribute the flavors evenly throughout the cheese mixture.
  3. Incorporate Mozzarella: Add shredded mozzarella cheese to the mixture and combine thoroughly, ensuring the cheese blend is homogenous and ready for spreading on bread.
  4. Prepare Bread: Lightly butter each slice of bread on one side. This buttered side will crisp up when cooked, so be sure it is evenly coated but not too thick.
  5. Assemble Sandwiches: Place half of the bread slices, buttered side down, onto a skillet or griddle heated to medium. Evenly divide the cheese mixture across these slices, spreading it to cover the surface but not piling it too high to allow the sandwich to hold together.
  6. Top and Cook: Place remaining bread slices on top of the cheese, buttered side up. Cook over medium heat until the bottom bread is lightly browned, about 3-5 minutes, then carefully flip the sandwiches. Continue cooking the other side until it is also lightly browned and the cheese is melted, approximately another 3-5 minutes.

Notes

  • ¼ teaspoon granulated garlic can be substituted for the clove of minced garlic for convenience.
  • For deeper flavor, prepare the cheese filling several hours ahead and refrigerate it until ready to use to allow herbs and seasonings to meld.
  • Keep the cheese layer moderate; too much cheese makes the sandwiches difficult to keep intact after melting.
  • Reheat leftovers in a lightly buttered skillet over low heat, flipping halfway through to restore crispness on both sides.
