Ingredients

Chicken

  • 1 teaspoon garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon Italian spice blend
  • 1/2 teaspoon red pepper flakes
  • 3-4 boneless, skinless chicken thighs
  • 1-2 tablespoons olive oil for cooking

Rice

  • 16 oz cauliflower rice
  • 1 cup chicken stock
  • Lemon juice from 1/2 lemon
  • Fresh cilantro for garnish
  • Marinated tomatoes for garnish

Instructions

  1. Prepare the spice rub: In a small bowl, mix together garlic powder, paprika, ground cumin, sea salt, Italian spice blend, and red pepper flakes. Rub half of this spice mixture evenly over the chicken thighs, reserving the other half for later use.
  2. Brown the chicken: Heat a skillet over medium heat and drizzle with 1 to 2 tablespoons of olive oil. Add the chicken thighs and cook them until golden brown on each side, about 2 to 3 minutes per side. Remove the chicken from the skillet and set aside.
  3. Cook the cauliflower rice: In the same skillet, add the cauliflower rice, chicken stock, lemon juice, and the remaining half of the spice mixture. Stir well to combine all ingredients.
  4. Simmer chicken and rice: Place the browned chicken thighs over the cauliflower rice in the skillet. Cover and cook on medium-low heat for approximately 20 minutes, or until the chicken is fully cooked through and the cauliflower rice is tender.
  5. Garnish and serve: Remove from heat and garnish with freshly chopped cilantro and lemon wedges if desired. Add marinated tomatoes on the side for an extra burst of flavor. Serve warm.

Notes

  • Use bone-in chicken thighs for juicier, more flavorful meat if preferred, but cooking time may need adjustment.
  • If fresh cauliflower rice is unavailable, frozen cauliflower rice can be used but drain excess moisture before cooking.
  • For a spicier dish, increase the amount of red pepper flakes to taste.
  • Marinated tomatoes can be purchased pre-made or homemade by marinating cherry tomatoes in olive oil, garlic, and herbs.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
