Zucchini Chicken Alfredo Roll Ups are a delicious low-carb twist on traditional pasta dishes, featuring thinly sliced zucchini wrapped around a flavorful mixture of shredded chicken and creamy Alfredo sauce. Topped with melted mozzarella and Parmesan cheese, this baked casserole is perfect for a comforting and easy weeknight dinner.

Ingredients

Zucchini Roll Ups

  • 1 large thick zucchini
  • 2 cups shredded chicken (rotisserie works great)
  • 2 cups Alfredo sauce (homemade or store-bought)
  • 1 1/4 cups shredded mozzarella cheese
  • 1/4 cup shaved Parmesan cheese
  • 1 tsp dried parsley or fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly spray a 9×5 or 8×8 inch baking dish with cooking spray to prevent sticking. Set it aside.
  2. Slice Zucchini: Using a mandolin slicer or a large sharp chef’s knife, slice the zucchini lengthwise into 1/8-inch thick slices. You will need approximately 12 slices to form the roll ups.
  3. Assemble Roll Ups: Lay a zucchini slice flat, then place shredded chicken on top. Add about 1 tablespoon of Alfredo sauce over the chicken. Carefully roll the zucchini slice tightly around the filling and place the roll seam-side down in the prepared baking dish. Repeat with all slices and filling.
  4. Add Sauce and Cheese: Pour any remaining Alfredo sauce evenly over the assembled roll ups. Sprinkle the shredded mozzarella cheese and shaved Parmesan cheese evenly over the top for a cheesy crust.
  5. Bake: Place the baking dish in the preheated oven and bake for 25 minutes, or until the sauce is bubbly and the zucchini noodles are tender and fully cooked.
  6. Garnish and Rest: Remove the roll ups from the oven and garnish with dried or fresh parsley. Allow the dish to rest for 10 minutes before serving to let the flavors meld and the filling set.

Notes

  • Use a mandolin for even, thin slices of zucchini to ensure quick and uniform cooking.
  • Rotisserie chicken is a convenient shortcut but shredded cooked chicken breast works well too.
  • If you prefer, homemade Alfredo sauce adds freshness and can be customized to your taste.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
  • This dish is suitable for low-carb and gluten-free diets by substituting pasta with zucchini.
